CLOS DE LA SOLEYA / CAVA BRUT

VARIETALS: 40% Xarello, 40% Macabeo &
20% Parellada

EL XAMFRÁ
Founded in 1987 and now managed
by oenologist Francisco Domínguez
Ruiz, the son of the founders.
Located in downtown Sant Sadurní,
but in the process of moving to an
old paper mill built in 1872 to expand
production thanks to worldwide
demand.

AGEING: 9 months in the bottle

ABOUT CAVA

TECHNICAL: 12.5% Alc. / 5 g/l

While Cava can be made in several
regions throughout Spain, 95% is
made with grapes from the
limestone soils of Penedés D.O. (45
minutes southwest of Barcelona)
with vines planted as high up as
2,800 feet. Cava grapes at those
altitudes can be intensely tart, more
akin to the structure of Champagne
than the fat–styled sparkling wines
California tends to produce. Unlike
other sparkling wines like Prosecco,
Cava is always produced using the
Champagnois Method, where the
secondary fermentation takes place
in the bottle.

VINTAGE: 2011
PRODUCER: El Xamfrá
LOCATION: Sant Sadurní d’Anoia, Penedés
APPELLATION: Cava

TASTING NOTES
Intriguing bouquet that opens up to
reveal touches of white asparagus and
dried herbs. The palate is nicely balanced
with subtle citrus notes complemented by
dried apricot and a touch of quince. It
leads to a precise finish that could do with
more length, but it is still an interesting
Cava, one that is full of personality.
ANNUAL PRODUCTION: 120,000 btls.
VIEIRA DE PLATA / ALBARIÑO

PRODUCER: Bodegas As Laxas

LOCATION: Arbo, Pontevedra (Galicia)
APPELLATION: Rias Baixas
VARIETALS: 100% Albariño
AGEING: Unoaked
ALCOHOL: 13.5% Alc.

NOTES: The scallop's shell ("vieira" in
Spanish) is much more than delicious
seafood and the perfect pairing for this
extraordinary white; it is the official symbol
of Galicia, a unique region in northwestern
Spain with gaelic roots and green fiord-like
slopes that meet the Atlantic sea forming the
renowned "Rias”. This crisp and floral
white showcases a beautiful combination of
pear, citrus and tropical fruits combined with
harmonious acidity and an impeccable
finish. Ideal for shellfish, shrimp, grilled fish
and all kinds of salads.

ANNUAL PRODUCTION: 100,000 btls.

only the highest quality Albariños.
ABOUT RIAS BAIXAS
Rías Baixas’ coastline is comprised of
inlets reminiscent of Norway’s fjords
and boasts some of Spain’s most
stunning beaches and an endless
supply of fresh seafood. Rías Baixas
is also the birthplace of Albariño,
Spain’s most famous white variety. In
Rías Baixas, this variety shares the
same nutrient-poor but mineral-rich
soils and moderate climate as other
renowned white wine producing
regions.

Vinos de Arganza is a family business

Sara Álvarez de Toledo was part of an
important noble family and vineyard

AGEING: Unoaked

ABOUT GODELLO & BIERZO

ALCOHOL: 12.5%

Godello is a grape variety native of
Spain and rarely found outside of El
Bierzo and Galicia in the Northwestern

Godello typically shows very attractive
tropical and citrus aromas, but
showcases greater minerality and
more lively acidity. Depending on the
winemaking method, Godello can be
creamy and dense with the ability to
improve with ageing. Bierzo’s soil

quartz and slate. The vineyards are
planted mainly on humid, dark soil that
is slightly acidic and low in carbonates.

PRODUCER: Vinos de Arganza
LOCATION: Villafranca del Bierzo,
León

TASTING NOTES
Beautiful straw yellow colour. On the
nose fruity, persistent and elegant with
a lovely perfume of baking spices,
melon, peaches, and mineral. Round,
spicy, and pleasure-bent, this smoothtextured, impeccably balanced effort

to pair with all kinds of shell fish,
seafood and salads.

BODEGAS SAN ANTONIO ABAD

VINTAGE: 2011
PRODUCER: Bodegas San Antonio Abad
LOCATION: Villacañas, Toledo
APPELLATION: D.O. La Mancha
VARIETALS: Tempranillo 100%
AGEING: N/A
ALCOHOL: 13.5%
TASTING NOTES
Made in the northern part of La Mancha,
in the province of Toledo using the
revolutionary “flash-détente” technology.
Albardiales is a young, fruit-driven wine,
offering bright red berry and raspberry
aromas, deep, vibrant and lively flavors on
the palate, well balanced and quite
refreshing on the finish. An outstanding
value from an up-and-coming region.

ANNUAL PRODUCTION: 500,000 btls.

San Antonio Abad is a cooperative
located in the province of Toledo,
Castilla La Mancha with 450 members
that together harvest over 2,000
hectares of vineyards. San Antonio is
one of the very few wineries in Spain
(and the world) using the flash-détente
technology, an expensive piece of
equipment that yields fresh, fruitforward wines by heating the grapes
and then sending them to a vacuum
chamber to be cooled. This technology
increases extraction from red grapes
while minimizing bitter seed tannin and
pyrazine (vegetal) odors. Read more.

THE LAND
Extreme continental climate, ranging
from the 5ºF in the winter to 115ºF in the
summer. Dryness is one of its most
distinct characteristics, since its microclimate prevents the entry of moist
winds, presenting a low rainfall (300 to
400 mm per year), thus La Mancha is
primarily a dry flat, farming plateau
with over 3,000 hours of sunshine a
year that yield beautifully-ripened fruit.
LOVE TEMPRANILLO / TIERRA DE CASTILLA
BODEGAS MUREDA

VINTAGE: 2012
PRODUCER: Bodegas Mureda
LOCATION: Ciudad Real
APPELLATION: Tierra de Castilla
VARIETALS: Tempranillo (organic)
AGEING: 2 months in French oak
ALCOHOL: 14.5%
TASTING NOTES: Cherry red color with
maroon hues. Pleasant fruity aroma with
notes of red fruit and a balsamic touch.
Well balanced, with sweet and round
tannins, full bodied and a long aftertaste.
The two months in French oak barrels add
enough complexity and structure without
sacrificing the fruit. Ideal to pair with
grilled meats, pasta and cheeses. Its
ripeness and alcohol content make it very
versatile.

ANNUAL PRODUCTION: 200,000 btls.

Mureda is a family-owned winery
boasting the largest organic vineyard
surface in the world with over 1,200
hectares (3,000 acres) planted. As an
official organic wine grower, Mureda's
vines are not exposed to any chemical
pesticides, herbicides or fertilizers, which
yields clean and healthy wines, modern in
style with just a touch of real oak to add
complexity and elegance without
sacrificing fruit or personality.

THE LAND
The warm location of the lands protects
the area from the hot and humid
Mediterranean winds which give a
continental climate to the area with cold
winters and hot summers with cool
nights. The rains are very scarce, taking
place in Spring and Fall. Everything favors
the stress of the vineyard in the final
stage of ripening. La Mancha is located
over a plain surrounded by hills and
grounds of limestone compositions with
a subsoil of carbonate-calcium with
extraordinary capacity to retain water.

oak casks to produce top quality wines.
ABOUT RIBERA DEL DUERO

50 years old. Most vines are planted at
between 2,500 and 3,000 feet above
sea level, and the region receives an
impressive 2,400 hours of sunshine per
year. The large difference in day and
night temperatures is responsible for

the vines of these vineyards for
generations around the village of
Gorrebusto whose history dates back to
the 12th century. When it came time to
build the new winery the family decided
to be as respectful of architectural
tradition as they are in the making of
their wines, building the new structure
faithfully in the style of the ancient
buildings around it.
ABOUT RIOJA ALVALESA
The smallest of the sub-regions in Rioja,
north of the River Ebro, the ash-colored
Cantabrian mountains dominate the
landscape. It is the closest to the
Atlantic Ocean and the most influenced
by its cooling effects. The soil on the
slopes and terraces where the vines are
grown is rich in chalky clay and
limestone, resulting in wines that are
characterful and rich in extract. Annual
rainfall is 20” on average, which forces
the roots to burrow deep into the soil in
search of water.

that surrounds Priorat, in the
province of Tarragona about 2 hours

made from Melon de Bourgogne - the
variety that was traditionally called
Muscadet. The similarity between the
name Muscadet and that of the Muscat
grape family is sometimes the cause of
confusion, but a single taste of a crisp,
dry Muscadet wine will confirm that it is
definitely not made from Muscat grapes.
Muscadet has long been the go-to wine
of choice for pairing with seafood.

  • 3. CLOS DE LA SOLEYA / CAVA BRUT VARIETALS: 40% Xarello, 40% Macabeo & 20% Parellada EL XAMFRÁ Founded in 1987 and now managed by oenologist Francisco Domínguez Ruiz, the son of the founders. Located in downtown Sant Sadurní, but in the process of moving to an old paper mill built in 1872 to expand production thanks to worldwide demand. AGEING: 9 months in the bottle ABOUT CAVA TECHNICAL: 12.5% Alc. / 5 g/l While Cava can be made in several regions throughout Spain, 95% is made with grapes from the limestone soils of Penedés D.O. (45 minutes southwest of Barcelona) with vines planted as high up as 2,800 feet. Cava grapes at those altitudes can be intensely tart, more akin to the structure of Champagne than the fat–styled sparkling wines California tends to produce. Unlike other sparkling wines like Prosecco, Cava is always produced using the Champagnois Method, where the secondary fermentation takes place in the bottle. VINTAGE: 2011 PRODUCER: El Xamfrá LOCATION: Sant Sadurní d’Anoia, Penedés APPELLATION: Cava TASTING NOTES Intriguing bouquet that opens up to reveal touches of white asparagus and dried herbs. The palate is nicely balanced with subtle citrus notes complemented by dried apricot and a touch of quince. It leads to a precise finish that could do with more length, but it is still an interesting Cava, one that is full of personality. ANNUAL PRODUCTION: 120,000 btls.
  • 4. VIEIRA DE PLATA / ALBARIÑO VINTAGE: 2013 PRODUCER: Bodegas As Laxas LOCATION: Arbo, Pontevedra (Galicia) APPELLATION: Rias Baixas VARIETALS: 100% Albariño AGEING: Unoaked ALCOHOL: 13.5% Alc. NOTES: The scallop's shell ("vieira" in Spanish) is much more than delicious seafood and the perfect pairing for this extraordinary white; it is the official symbol of Galicia, a unique region in northwestern Spain with gaelic roots and green fiord-like slopes that meet the Atlantic sea forming the renowned "Rias”. This crisp and floral white showcases a beautiful combination of pear, citrus and tropical fruits combined with harmonious acidity and an impeccable finish. Ideal for shellfish, shrimp, grilled fish and all kinds of salads. ANNUAL PRODUCTION: 100,000 btls. ABOUT BODEGAS AS LAXAS Established in 1862 in Arbo (Pontevedra), As Laxas was a founding member of the Rias Baixas appellation after being purchased by Simón Ferro in 1975. Today, under the leadership of Ferro’s 4 children the winery is equipped with the latest technology and owns 50 Has of vineyards dedicated to producing only the highest quality Albariños. ABOUT RIAS BAIXAS Rías Baixas’ coastline is comprised of inlets reminiscent of Norway’s fjords and boasts some of Spain’s most stunning beaches and an endless supply of fresh seafood. Rías Baixas is also the birthplace of Albariño, Spain’s most famous white variety. In Rías Baixas, this variety shares the same nutrient-poor but mineral-rich soils and moderate climate as other renowned white wine producing regions.

AGEING: 22 months in oak barrels ABOUT MENCIA & BIERZO ALCOHOL: 14% Mencia is a grape variety native of Spain and rarely found outside of El Bierzo in Northwestern Spain. • 9. ALBARDIALES / TEMPRANILLO BODEGAS SAN ANTONIO ABAD VINTAGE: 2011 PRODUCER: Bodegas San Antonio Abad LOCATION: Villacañas, Toledo APPELLATION: D.O. La Mancha VARIETALS: Tempranillo 100% AGEING: N/A ALCOHOL: 13.5% TASTING NOTES Made in the northern part of La Mancha, in the province of Toledo using the revolutionary “flash-détente” technology. Albardiales is a young, fruit-driven wine, offering bright red berry and raspberry aromas, deep, vibrant and lively flavors on the palate, well balanced and quite refreshing on the finish. An outstanding value from an up-and-coming region. ANNUAL PRODUCTION: 500,000 btls. San Antonio Abad is a cooperative located in the province of Toledo, Castilla La Mancha with 450 members that together harvest over 2,000 hectares of vineyards. San Antonio is one of the very few wineries in Spain (and the world) using the flash-détente technology, an expensive piece of equipment that yields fresh, fruitforward wines by heating the grapes and then sending them to a vacuum chamber to be cooled. This technology increases extraction from red grapes while minimizing bitter seed tannin and pyrazine (vegetal) odors. Read more. THE LAND Extreme continental climate, ranging from the 5ºF in the winter to 115ºF in the summer. Dryness is one of its most distinct characteristics, since its microclimate prevents the entry of moist winds, presenting a low rainfall (300 to 400 mm per year), thus La Mancha is primarily a dry flat, farming plateau with over 3,000 hours of sunshine a year that yield beautifully-ripened fruit.
  • 10. LOVE TEMPRANILLO / TIERRA DE CASTILLA BODEGAS MUREDA VINTAGE: 2012 PRODUCER: Bodegas Mureda LOCATION: Ciudad Real APPELLATION: Tierra de Castilla VARIETALS: Tempranillo (organic) AGEING: 2 months in French oak ALCOHOL: 14.5% TASTING NOTES: Cherry red color with maroon hues. Pleasant fruity aroma with notes of red fruit and a balsamic touch. Well balanced, with sweet and round tannins, full bodied and a long aftertaste. The two months in French oak barrels add enough complexity and structure without sacrificing the fruit. Ideal to pair with grilled meats, pasta and cheeses. Its ripeness and alcohol content make it very versatile. ANNUAL PRODUCTION: 200,000 btls. Mureda is a family-owned winery boasting the largest organic vineyard surface in the world with over 1,200 hectares (3,000 acres) planted. As an official organic wine grower, Mureda's vines are not exposed to any chemical pesticides, herbicides or fertilizers, which yields clean and healthy wines, modern in style with just a touch of real oak to add complexity and elegance without sacrificing fruit or personality. THE LAND The warm location of the lands protects the area from the hot and humid Mediterranean winds which give a continental climate to the area with cold winters and hot summers with cool nights. The rains are very scarce, taking place in Spring and Fall. Everything favors the stress of the vineyard in the final stage of ripening. La Mancha is located over a plain surrounded by hills and grounds of limestone compositions with a subsoil of carbonate-calcium with extraordinary capacity to retain water.
