ABOUT CAVA
TECHNICAL: 12.5% Alc. / 5 g/l
While Cava can be made in several
regions throughout Spain, 95% is
made with grapes from the
limestone soils of Penedés D.O. (45
minutes southwest of Barcelona)
with vines planted as high up as
2,800 feet. Cava grapes at those
altitudes can be intensely tart, more
akin to the structure of Champagne
than the fat–styled sparkling wines
California tends to produce. Unlike
other sparkling wines like Prosecco,
Cava is always produced using the
Champagnois Method, where the
secondary fermentation takes place
in the bottle.

Intriguing bouquet that opens up to
reveal touches of white asparagus and
dried herbs. The palate is nicely balanced

Cava, one that is full of personality.

Established in 1862 in Arbo

ABOUT RIAS BAIXAS
Rías Baixas’ coastline is comprised of
inlets reminiscent of Norway’s fjords

is also the birthplace of Albariño,
Spain’s most famous white variety. In
Rías Baixas, this variety shares the

black currant pastille that is nicely defined
but takes time to unfurl. The palate is
medium bodied with dense, chewy
tannins. Very approachable modern style
Rioja unbeatable for the price. Even
greater when paired with poultry or pasta
dishes. Fine barbecue wine as well.

Godello is a grape variety native of
Spain and rarely found outside of El
Bierzo and Galicia in the Northwestern
part of the country. Like Albariño,
Godello typically shows very attractive
tropical and citrus aromas, but
showcases greater minerality and
more lively acidity. Depending on the
winemaking method, Godello can be
creamy and dense with the ability to
improve with ageing. Bierzo’s soil
includes a mixture of fine elements,
quartz and slate. The vineyards are
planted mainly on humid, dark soil that
is slightly acidic and low in carbonates.

San Antonio Abad is a cooperative
located in the province of Toledo,
Castilla La Mancha with 450 members
that together harvest over 2,000
hectares of vineyards. San Antonio is
one of the very few wineries in Spain
(and the world) using the flash-détente
technology, an expensive piece of
equipment that yields fresh, fruitforward wines by heating the grapes
and then sending them to a vacuum
chamber to be cooled. This technology
increases extraction from red grapes
while minimizing bitter seed tannin and

THE LAND
Extreme continental climate, ranging
from the 5ºF in the winter to 115ºF in the
summer. Dryness is one of its most
distinct characteristics, since its microclimate prevents the entry of moist
winds, presenting a low rainfall (300 to
400 mm per year), thus La Mancha is
primarily a dry flat, farming plateau
with over 3,000 hours of sunshine a
year that yield beautifully-ripened fruit.

The Martínez family has been tending to

ABOUT RIOJA ALVALESA
The smallest of the sub-regions in Rioja,

Cantabrian mountains dominate the

by its cooling effects. The soil on the
slopes and terraces where the vines are
grown is rich in chalky clay and

Jean-Marie Berthier founded Domaine
de Clairneaux in Sainte-Gemme-enSancerre in 1983 when he married his
wife. In 1998 he took over his father’s
lands in Coteaux du Giennois. In 2012
Jean-Marie’s sons Clément and Florian
joined the family business after a few
years of working in Burgundy and
exploring new world winemaking
techniques in the USA and New
Zealand.

ABOUT COTEAUX DU GIENNOIS
LOCATION: a parcel of land next to the
village of Pougny.
APPELLATION: Coteaux du Giennois
VARIETALS: 100% Sauvignon Blanc
AGEING: Unoaked, on the lees
be roughly translated as “Land” or “Soil
Limestone pebbles” referring to the unique
pure limestone pebbles that make up the
soil of the parcels where the vines are
grown. This unique soil combined with the
character of the Sauvignon blanc grape
gives these wines a bright yellow robe, with
greenish reflections. The bouquet is rich in
pear, peach, and white floral notes and
hawberry shrub while on the palate it is big
with a very feminine elegance.
ANNUAL PRODUCTION: 5,000 bottles
The Coteaux du Giennois vineyard is
situated on the hillsides along the
Loire River in the states of Nièvre
and Loiret. The 195 hectares of the
appellation extend into 14 towns.
Between Gien and Cosne-sur-Loire,
this vineyard producing authentic
wines revealing the originality of its
terroir. The vines grow on flinty or
limestone hills along the Loire.
White wines are fresh, fine and
fruity; rosés are tender and subtle,
the reds aromatic and round.
