A presentation of artisan Manchego cheese producers Quesos Campayo. One of the very few remaing cheese prducers that still retain 100% control over the production process, using milk entirely from their privately owned and fed, pure breed, Manchego sheep.
2. ‘Quesos Campayo’ was set up in 1985 by Felix
Campayo, an experienced local famer, whose life-long
ambition had always been to produce artisan cheeses
of outstanding quality produced entirely from his own
livestock.
Campayo is one of the very few ‘queserías’ (cheese
producers) that is able to control, from start to finish, the
entire production process.
The only milk used in the production of Campayo cheese
comes from the 3,500 head of pure breed Manchego
sheep, who in turn are fed entirely on grain and cereal
from the estate s 500 acre plot.
In this way Quesos Campayo has the luxury of total
control over the raw materials used in the production of
its cheeses and can ensure, with the help of the latest
cutting edge techniques, that the highest levels of quality
are always upheld.

under the brand name Cuarto Perea, the original
name given to the farm estate.
Under this brand Campayo produces various different
styles of cured sheep’s cheese combining centauries
old production techniques with the latest modern day
technology and quality control.
In this way the Cuarto Perea range continues the
strong reputation for quality and consistency with
which Quesos Campayio has become synonymous.
