note
Whoever came up with the expression “March Madness” must have been
someone who’d experienced Tempo’s busy craziness. There are so many
things happening around us this month - in Abu Dhabi, Dubai, Sharjah - but
also within Tempo’s own community and creative ecosystem.
The big news in March is the launch of the Abu Dhabi International Poetry
Festival which is being organized jointly by BrandMoxie and Rooftop
Rhythms, in collaboration with the Paris-Sorbonne University Abu
Dhabi, and with the support of the US Embassy and the Fatima Bint Hazza
Foundation. What’s cool about the event is that brings together international
poets like Patricia Smith, G Yamazawa and Kane Smego, together with
recognized Emirati poets, and yet it also offers the community interaction
opportunities through poetry workshops and slam competitions. And this
is only one event that plays against the rich tapestry of Abu Dhabi Festival
events - a cultural and artistic feast brought to you over the entire
month by ADMAF.
Then there are the cool social and public-good initiatives that are going on.
Tempo is excited about its support of the Tarahom fundraiser initiative, in
aid of those suffering the tough winters of the Levant. In fact Tempo is so
committed, it is giving away a very special gift that we once received - a
Man City jersey that has been signed by the players of the team to help raise
money for the charity. We reckon that Man City super-fans would try so
hard to outbid each to own this shirt that we could raise a good amount for
the Red Crescent’s Tarahom cause.
Of course no March is ever complete without a celebration of mothers. In this
issue Tempo dedicates a special page to express our love of mothers. We take
this opportunity, on behalf of our staff and contributors, to honour a very
special mother - HH Sheikha Fatima Bint Mubarak - who has been in the
forefront of women’s advancement and positive social change; earning the
noble title of Mother of the Emirates.
As always, Tempo celebrates creativity, innovation, engagement and
community. Reach out to us and be part of the conversation, across any of our
social media platforms.
Spread kindness,

ON ROOTS AND SHOOTS: THE JANE
GOODALL VISIT
As an activist, it would be a goal of mine to
create a safe environment for those around
me; as Jane Goodall said in the video we
watched in class, if there are several people
trying to make changes in small areas,
it eventually becomes a global impact. I
really like that idea, and I would really
strive to work towards something like that
if I were labeled an activist

Just wanted to write and say thank you for
the amazing opportunity to see Jane speak.
What a fantastic night! Thank you.

I really connected with Jane’s words on
Lost Wisdom:
1. How indigenous people used to make
decisions on how it would affect people
now and in generations to come.
2. Seeing the disconnect between the
clever brain and the heart (compassion).
3. “We can only achieve our true human
potential, which is huge, if we have
harmony between head and heart.”
- Matt Lindsey, ACS Teacher
Listening to Jane Goodall last night
reminded me of the importance of self-
restraint. We need to restrain our demand
for food, money, goods and instant
electronics. We are one planet and we need
to share.

p ed HEALTH
Our entire life revolves around sitting. When we work, we sit.
When we travel, by car or by air, we sit. When we socialize,
we sit. Then there is the hours and hours of being glued to the
TV that requires, you guessed it…sitting! As a society, we have
become sedentary people totally changing the daily lifestyles
that our ancestors had. What is the health risk associated with
this sedentary lifestyle?
More and more research is confirming the notion that sitting too much is risking our
health in so many ways. The latest study, published in the International Journal of
Behavioral Nutrition and Physical Activity looked at the health of Men and aged
45 to 65 from New South Wales, Australia, who sat less than four hours a day, four
to six hours, and six to eight hours. Those who sat more than four hours a day were
significantly more likely to report having a chronic disease such as cancer, diabetes,
heart disease and high blood pressure. More surprisingly, too much sitting and a
sedentary lifestyle is not offset by exercising regularly. Scientists from University of
Toronto found out that sitting too much, even among people who exercise regularly led
to higher rates of hospitalization, heart disease and cancer, as well as early death.
Sitting long hours also affects our spine. People that sit more are at greater risk for
accelerated spinal degeneration and herniation of intervertebral disks. When we
move, the disks in our spine expand contract like sponges soaking up nutrients. Sitting
too long hardens the ligaments and strains the muscles that support the joints. That
in turn creates chronic neck and back pain that sometimes can be debilitating. At our
Chiropractic clinic, we see many professionals, from CEOs to IT managers who tend to
sit for hours and hours during the day consumed by their work. They later suffer from
pain and are affected by degenerative spinal disease.
The solution starts with sitting and moving more. Start by simply standing rather than
sitting whenever you have a chance. At work, a standing desk would be preferable.
Stand or better walk for a minute or two every half hour. You can also stretch for a
couple of minutes and go back to whatever you were doing. If you watch TV at night,
commercials can be a good reminder to get up and take a water break.
Get up! Stand up! Get up for your Spine!

• Or pin together a broken bracelet.
How about newspaper? If you’re like me and still
like hard copy reading material versus its electronic
counterpart, then you’ll have plenty of paper laying
around. Well, how making good use of all that
newsprint paper?
• Make a vinegar and water solution and use the
newspapers to clean window surfaces
• Crumple a few pieces up and stick them in your shoes.
Your kicks will be fresher by morning!
Lemons! Got too much of ‘em? Here are some ways to
maximize their use, and I’m not talking about lemonade.
• Whiten your fingernails: Slice a piece of lemon and rub the
pulp all over the surface of your nails.
• Make your white clothes whiter: Add half a cup of
fresh lemon juice to your laundry load; not only will
your clothes be whiter, they’ll smell lemony fresh!
• Lip exfoliator: got dry, cracked lips? Rub a bit of lemon juice
on your lips before bed and wash off in the morning to
help remove dead, dried skin.

Behind The Frames
I’ve always believed that the
definition of ‘Art’ is endless.
When put in perspective,
everything falls under the
category of Art. Every year a
new form of ‘Art’ is developed,
whether it’s through artists
themselves or the change
brought through technology.
Digital Art, for instance,
could never have been fully
comprehended if it was explained
to someone who has not been
exposed to it… but over the
years this art form has not only
blossomed, but changed the face
of many other creative industries.
The amazing thing about Art is that often
it just happens - an idea comes to mind,
then quickly inspires another thought
that emerges out of the most random of
experiences; in places that you never
thought would lead to something big.
That’s exactly what happened to a pair
of locally based podcasters by the name
of Fatma Al Muhairi (Fatma) and Tarek
Monzer (Tim).
Fatma and Tim are animation students
at the Cartoon Network Animation
Academy in Abu Dhabi. They launched
their own podcast in SoundCloud through
the “Behind the Frames” series where
they share their thoughts and frustrations
about being animators and artists.
Podcast:
https://soundcloud.com/behind_the_
frames
Fatma:
http://instagram.com/almagicc
https://www.linkedin.com/in/
fatmaalmuhairi
Tim:
http://instagram.com/artoftim
https://artoftim.wordpress.com/
They received a lot of feedback after
the first podcast, and people wanted to
hear more of what they had to say so
they began discussing broader topics,
such as the jobs available within the
creative industry and the opportunities
and challenges that existed. Listeners
around the UAE tuned in to listen to these
discussions and eventually people outside
of the UAE started taking notice as well.
Very soon people began to suggest more
topics, and even sent in questions they
wanted Fatma and Tim to answer.
What simply began with jokes and rants
turned into something big and helpful.
It’s normal to feel alone as an artist, but
the “Behind The Frames” began to address
this vacuum, as it tackled real topics such
as isolation and frustration that many
artists feel.
Fatma and Tim brought artists together,
and showed them that they were “not
alone”, that they art part of a growing
community of artists who had common
issues; that they could share their ideas
and voice their concerns.
We all know that art is changing as we
speak, with new ideas and concepts. As we
learn to appreciate the authenticity of art
there are many who are trying to find ways
of making a living off of it. That’s why
people like Fatma and Tim sharing their
insight and their love for art
is so important.
Even though a podcast may seem small,
these two have managed to reach out to
an entire audience of people in ways other
media outlets cannot, proving once again
that the definition of art is endless.

Watch me play “Queen Bee” here:
1. How did you get started?
I always wanted to perform my songs in
front of people but could never gather
up the nerve to do that. So I started
doing open mics for one and a half years
– performing covers only. Then with
the encouragement of some wonderful
people, I began writing songs and
putting myself out there a lot more.
2. Have you ever mixed up your music
with other genres?
Since I don’t really have a genre that’s
hard to say. But I’m open to the idea!
3. What are your favourite
music genre?
I listen to pretty much everything and
I enjoy it all, but I still haven’t really
gotten into house – so I guess I know
what is not my favourite.
4. What do you do besides sing?
I’m a tutor and a junior
behaviour therapist.
5. What do you need to be a singer?
Just real love and passion for music and
an openness to learn!
6. Tell us about your partner.
His name is Luis Grolez. He is a bassist
and we’ve been performing together
since September 2014.
7. What do you think about the local

It is in its early developing stages but
it is building up quickly thanks to

Song: ‘‘Queen Bee’’
Well you’re such a mystery, you’re name
should be ‘Tomorrow’, ha!
I’ll be your history and you will be my
sorrow,
I’ll bring on the whole army, no need to
beg or borrow,
We’ll take on the enemy and make new
rules to follow.
Histories and mysteries,
And bumblebees with blistered knees,
I’ll take it in like sweet honey
And spit it out like Listerine.
Arms bent and feet spent,
I shut my eyes, you shut your mouth,
The charm went when you spent,
Three years to figure it out.
And without the misery, well my life
would be hollow,
And you like the company and excuses
that follow,
You’ll be my history and I will be your
sorrow,
Make me your Queen Bee and the enemy
will follow...
(Humming)
What a time to step it up, you really had to
mess this up,
Let’s talk about today, carpe dium all the
way,
Royal jelly in my belly, who’d be laughing
when you sway?
Not me, I’ll be
Out on a stinging spree,
No free, not clean,
Until the venom runs out of me.
Arms bent and feet spent,
I shut my eyes, you shut your mouth,
The charm went when you spent,
Three years to figure it out.
Trust bent, on weakness,
And a husk of a human being, a
best friend,
I taste it, I chase it,
Down with good memories, wasted.
And without the misery, well my life
would be hollow,
And you like the company and excuses
that follow,
You’ll be my history and I’d love to be your
sorrow,
Make me your Queen Bee and the enemy
will follow you down.

PROJECT ALMANAC
By Neil Bie
Project Almanac is a 2015 Sci-Fi movie dwelling on
the concept of Time Travel. Jonny Weston takes
on the lead role as David Raskin, a 17-year old high
school senior who aspires to get a scholarship at
MIT. Co-starring Sam Lerner, Allen Evangelista as
his friends, Virginia Gardner as his sister and Sofia
Black-D’Elia as his love interest, a series of events
from that point on led them to discover blueprints
of a time machine that they eventually create and
use for their own gains. Movie goers will find it
hard to follow suit as Project Almanac isn’t your
regular two or three camera set-up mode of shot
- all scenes were shown using a single handheld
camera with just a direct cut-to-cut method of
transitions. The movie stretches the limits of
what a filmmaker can do with the usage of the
found footage set up: panning, tilting and zooming
measures at times are too fast to the point that
movie goers might not really understand a scene
or two. On a lighter note, the effects used in a movie still got a reality bite to it - usage of
special floating effects and blurs were only seen in time travel sequences and the rest
were your average slice-of-life scenarios seen in a perspective that would make you
reminisce or think about how your High School teenage life was. It leaves movie goers
a feeling of “what I would have done” if they were in David’s shoes. With the intricacies
in the way that Project Almanac was brought to the big screen, the film would be
something that would either have you stand up in your seat and forget it after the first 10
minutes or have you at the edge of your seat till the last scene.
WALKING ON SUNSHINE
By Vera Rosales
If you are looking for a film that will satisfy your
movie musical craving while waiting for Pitch
Perfect 2 this summer, Walking on Sunshine
‘might’ do that for you. The movie musical (that
somehow reminds one of 2008’s Mamma Mia)
takes place in the beautiful coast of Puglia, Italy
where we meet Taylor (Hannah Arteron), a
realistic but hesitant young woman who, after
three years, comes back to the paradise in hopes
to rekindle a past summer romance with a man
that she believes is ‘the one’. Tables turn when
she is surprised with her big sister marrying the
man of her dreams in which she decides to hide
her feelings and forget that she ever met him.
While the movie has received a passing grade from
numerous film critics, Vertigo Films (producers of
Bronson and Streetdance 3D) deserves merit for
putting effort into its materialization since making
a musical is not an easy task. The story had the
basic ‘woman looks for man, man has another gal
but still loves the woman” plot that you already
know the ending to. Although, the storyline had few scenes of romantic tension and
emotional suspense that were fairly satisfying, there were a few comedic queues that
lacked that certain punch and could’ve made it all the better. The 80’s musical numbers
are as average as it can get – with some of the actors unsure of what they were lip
syncing to – nevertheless, the song choices and energy that each actor brought to the
table per scene is something to appreciate. The movie lacks a few elements; however
overall, the movie is quite enjoyable, if you give it a chance. If you are someone who
appreciates a chick flick 80’s musical (with a predictable storyline)… and of course – the
beauty of Italy, Walking on Sunshine ‘might’ gratify you momentarily.

Battlefield Hardline
Platform: PC, PS3, PS4, XBOX 360, XBOX ONE
Status: Releasing in March 2015
Long time fans of the Battlefield series will find themselves in a whole new realm in
the latest iteration of this first-person shooter (FPS) game. Instead of the usual military
scene, this game deals with the police and their on-going battle against crime. Two
of the many roles in the previous Battlefield series were given a fresh name: from
“Assaults” to “Operators”, “Recons” to “Professionals” though still maintaining much of
their tasks and functionalities from before. Two other jobs: “Support” and “Engineer” are
now named “Enforcer” and “Mechanic” respectively but were given a drastic revamp if
compared to their predecessors and this is just the tip of the iceberg when it comes to
the many changes which will entice both old and new FPS gamers.
Bloodborne
Platform: PS4
Status: Releasing in March 2015
From Software’s games which include Demon’s Souls and the two installments of Dark
Souls have always been and will always be an ‘acquired taste’ for gamers – either you
like it or don’t. Most people easily give up after the game’s hard and long learning curve
wherein you find yourself dying left and right in one wrong move. Bloodborne is no
different from this – areas shrouded in surprise and mystery, weapons that will take
time for you to master, movesets that you will all have to learn to survive in the game;
it’s the hardcore player’s dream game come to fruition. Casual players should veer away
from this game not unless they’re willing to devote time to learning, mastering and
eventually conquering the gothic, ruined city of Yharnam. Hardcore players on the
other hand, would enjoy countless hours of figuring out the enemy’s weak spots and
exploring the area’s scattered hidden secrets all while aiming to be the first to beat the
game in a speed run! After all, this game wouldn’t be able to make it as Game Informer’s
“Most Anticipated Game of 2015” without a good reason.

Google’s Vint Cerf warns of
‘digital Dark Age’
Vint Cerf, a “father of the internet”, says he is worried that all the images
and documents we have been saving on computers will eventually
be lost.Currently a Google vice-president, he believes this could occur
as hardware and software become obsolete. He fears that future
generations will have little or no record of the 21st Century as we enter
what he describes as a “digital Dark Age”.Mr. Cerf made his comments at
a large science conference in San Jose.
Scanadu:The Medical Tricorder

It’s called “Scanadu

Xanadu, an ancient
city of great splendor

progress, made
famous by English

-- and the greatest
thing about it is
that it’s not a design
concept, nor a million-dollar prototype, but an actual
product. After a successful crowdfunding round via
Indiegogo, the Scanadu has begun shipping to backers
at the end of January. It is a tiny, round and rigorously
white device -- even though a black version is in the
plans. You place it on your forehead, and then through
its sensor, and in a matter of seconds, the Scanadu
measures heart rate, temperature, blood pressure,
oxygen level and provides a complete ECG reading.

House of NomadInviting Tempo into their
living workspace, founders
of the white-hot Emirati label
“House of Nomad” Ahmed El-
Sayed and Saleh Al-Bana are
open, hospitable, and most
importantly, surrounded
by inspiration. There’s the
pixel art wall decals, the
mood board covered in
images of powerful women
in minimalist uniforms, and
the chandelier influenced by
Murakami, the Japanese
pop artist.
Founded just under a year ago, House of
Nomad is uniquely inspired, matching
the playfulness of its signature Arabic
calligraphy with a stripped down purity.
Ahmed reiterated the brand’s positioning,
“Having a brand made in the UAE is so
important to us.”
Saleh calls their fashion “luxe sportswear,”
adding, “The UAE is our home so to
produce locally is incredible. Everything is
conceived here, made here, and constructed
entirely by hand, piece by piece.”
Over the course of three tightly curated
collections, the founders have projected a
global-meets-local vision coloured by their
travels and life in Dubai. “99% of the people
here are in a transitional state. They move
in for a few years and they move out. That’s
how we came up with our name,”
Ahmed says.
The 2015 spring/summer collection takes
cues from the schoolyard and is the brand’s
most advanced yet. Items include bomber
jackets, mini-skirts, jumpers and more,
offered exclusively in neoprene, a stretchy,
high-tech fabric used in the construction of
scuba gear.
Innovative and yet highly wearable, the
label has met with quick success. When
pop star Gwen Stefani was looking for fresh
regional talent to outfit her performance at
the Men’s Handball World Championship
in Qatar, she hand-selected House of
Nomad to dress her dancers.
The once-in-a-lifetime opportunity was
arranged by the duo’s PR Company, Faux
Consultancy. “It’s really important to hire a
good PR company to represent your brand.
They become a good partner for design
direction, retail distribution, and market
research. It’s invaluable,” says Ahmed.
House of Nomad can be found at fine local
boutiques like The Luxury Arcade in Abu
Dhabi and Sauce in Dubai.
Ahmed El-Sayed is the co-founder of House of Nomad and a former fashion editor. Entrepreneur Saleh Al-Bana quit his job to launch House of Nomad a year ago.

March Marks Mother’s Day
It’s true that we should all cherish our mothers every
day of the year, however March is undoubtedly the one
month where we have absolutely no excuse to remember
our mothers and tell them how much we appreciate the
amazing role they play in our lives.
Although mother’s day is celebrated on different dates and in various ways, due to the different traditions and cultures around the world, our love towards our mothers is pretty
constant, and should remain eternal.
By Kinda Al Azem
SENDING LOVE TO MOM
In the UAE the mother’s day isn’t complete with an appreciation of “The Mother of
the Nation” HH Sheikha Fatima Bint Mubarak for nurturing the country and for her
involvement in the improvement of education, health and environment. HH Sheikha
Fatima Bint Mubarak has been devoted to encouraging women to participate actively
in the progress and development of the UAE. Although Mother’s Day is marked on
March 21 in most Arab countries, other countries celebrate this special day on other
calendar days, and according to their own cultures and traditions.
UAE
In the UAE, nurseries, schools and universities
celebrate the mother’s day by holding activities
and competitions such as drawing, painting and
story-writing. Stores and bakeries also offer
goodies that can be shared with mom while
UAE TV programmes focus on mother’s day in
interviews and show episodes.
Japan
People in Japan celebrate the mother’s day on the
second Sunday of May. They give their mothers
flowers as a sign of love, honour and appreciation.
In Japan carnations are offered to mothers, as
symbol of beauty and grace.
United Kingdom
People in UK celebrate mother’s day on the fourth
Sunday in the lent moth, however, the actual date
changes every year. One of the traditions in the UK
is to bake cakes that contain rich almond - these
cakes are called ‘Mothering Cake’ or ‘Simnel Cake’.
Russia
Russians celebrate mother’s day on the last
Sunday of November by giving their mothers
gifts such as flowers and cards. However in Russia
“International women’s day” is more recognized
than mother’s day.
India
Indians celebrate the mother’s day by giving their
mothers gifts to express their feelings and show
their care and love towards them. They also offer
traditional Indian dishes for their mothers.
Syria
Syrians prefer to celebrate the mother’s day with
their entire big family. They decorate their homes
with stylish accessories and they put gifts such as
perfume, flowers and jewelry at the corner of the
guests’ room for all the mothers in their families.
Lourdes Torres,

Time Well Spent Quinoa: A Seed or an Ancient Grain?
This morning, I met my friend
Melissa for our fourth 5am
cardio session in my tower’s gym.
We completed our second week
of Mornings with Melissas, an
attempt to replace and rekindle
our former Abu Dhabi Education
Council carpool. While living in
the same building and teaching
on the same high school campus,
she drove us to and from work
allowing ample opportunityto
wind up and wind down during
our 40-minute commute.
I suspect Melissa initiated our sessions to
make up for lost time and time to be lost–
sadly, this is my last column since I’ll be
leaving the country in April – but perhaps,
more importantly, she enlisted a partner
for scheduled physical activity at the
beginning of the day. Camaraderie, weight
loss, mental clarity and a renewed sense
of purpose for the coming day are simply
by-products of our time spent sweating side
by side.
So, even if you’re only inclined toward
yoga, Tai Chi or basic calisthenics –
understandable given the pre-dawn
hours –at least you’re setting intention
for a productive day. You will spike your
metabolism, work up an appetite and likely
choose healthier options for breakfast.
I’m guessing, with consistency, you’ll also
increase time spent on the mat or in the
gym and begin scheduling additional time
during lunch or after work challenging
your fitness.
Based on attending a “Being Superhuman”
fitness seminar in Dubai recently, Ben
Greenfield, a fat loss coach, nutritionist
and Ironman Triathlete, saidour greatest
cardiovascular efficiency and muscular
strength peaks between 4-6 pm. However,
if you can’t fit in a session within those
hours or twice daily, then commit to
starting your day strong. Just start.
Jimmy Pena, an exercise physiologist,
bestselling author and founder of PrayFit
says, “After writing countless articles on
health and fitness…and even after co-
authoring six health and fitness best sellers,
I can say with certainty that the most
effective form of exercise is whatever you’ll
actually do.” So, no matter what time or
activity you choose, developing a practice
will enhance calorie burn and ultimately,
impact the quality of your daily life.
Now before you set your alarm, set your
intent (think yoga here) and contemplate
gratitude. While running the rugged,
mountainous terrain for Wadi Bih in Dibba,
Oman in February, I counted my kilometers
and my blessings. Grateful for each
moment on the treadmill and pumping iron
in the gym – each moment leading up to
the race – I used positive energy (perhaps, it
was adrenaline but I milked it) to maneuver
the winding, rocky desert roads and bypass
negative thoughts about what some would
consider a grind. By eliciting appreciation
for time well spent, I spent my time well.
Capturing dawn to midday while participating in Wadi Bih in Dibba, Oman.
Quinoa (pronounced KEEN-
wah) is in fact, a seed!
Quinoa is a nutritious super food,
also known as a psuedocereal
as it’s not a member of the true
grass family. It originates from
the Andes and was farmed by
the Incas thousands of years ago.
It has made its way back into
the modern world due to gluten
intolerances and people wanting
to include more nutritious foods
in their daily diets.
This super crop has fantastic health
benefits and contains all eight of the
essential amino acids, making it a
complete protein. It also includes fibre,
phosphorus, magnesium and iron – its
gluten free and easy to digest. What more
could we ask for!
Quinoais a wonderful alternative to
couscous, rice and pasta. The taste
is slightly nutty and becomes fluffy
once cooked. It needs to be thoroughly
washed in filtered water to remove the
saponin otherwise it can taste a little
bitter. Hemsley & Hemsley advise you
to soak (activating) Quinoa for 8 hours
as “it increases the nutrients available”.
Remembering that Quinoa is a seed “you
can continue the germination process,
changing the water regularly, to grow
young vegetable shoots to add to salads
and stir-fries”.
To cook Quinoa, bring 2 cups of water
to the boil and add one cup of washed/
soaked Quinoa. Simmer and allow to
cook for approximately 15 minutes – or
until the germ separates from the seed.
Once cooked it should still have a bite to
it. Quinoa can be eaten warm, cold and
added to salads or used in other dishes, as
mentioned below. It will also store well in
the fridge, ensure you place it in a covered
plastic box.
I guess the next question you ask is, “Where
can I buy this super crop?” Quinoa can
be bought at the Organic Store (Masdar
& Nation Towers), I have also bought it at
Lulu’s – look in the healthy, gluten-free
section. Quinoa is available in Waitrose too
(check the rice/pasta section).
Apart from using the Quinoa in salads or
as a substitute for rice and pasta, there are
other uses like this recipe:
Quinoa Porridge (Low GI, high protein,
gluten-free):
Serves 2
150g Quinoa
350ml Water
100ml Coconut milk
1tsp cinnamon
Honey/maple syrup to taste
2 tablespoons of dried fruit (cranberries,
sultanas etc)
As previously mentioned, wash the Quinoa
well or use the overnight soaking method.
Pop the Quinoa and water in a saucepan
and simmer for 10-12 minutes (when the
white tails appear). Drain and return to the
pan – add the milk, cinnamon, sweetener
and dried fruit. Gently simmer
for 5 minutes.
Serve with an extra swirl of coconut milk
and top with seeds, nuts and, or chopped
fresh fruit.

Todd English:
Boston’s Culinary Charm inthe UAE
food & wellness
Tempo UAE (Group) TempoBeat (Group) Abu Dhabi Tempo (Page) @tempoplanet @tempoplanet
Bold, soulful, creative,
rustic yet elegant with
lots of enticing flavours is
how I would describe the
dishes I’ve enjoyed at Todd
English’s Olives and Bonfire,
while I was living in Boston.
When I finally met the man
behind the cuisine, I was star-
struck by his spirit, charisma
and warmth. A setting of a
single, unadorned cocktail
table created an immediate
connection between us as
he told me about his journey
and how he planned to bring
his connoisseurship to
the UAE.
What inspired you to become a chef?
Todd: I always loved cooking. Originally I
was recruited in college to play football and
baseball. My favourite part of the game was
stopping by the great BBQ pits in Atlanta
after the game. I realized it was my true
passion and went to the Culinary Institute
of America because it was and still is the
best culinary school in America.
What are some of the experiences that
have shaped you?
Todd: It’s been one long journey.
Everything thus far has been part of that
journey; from opening my first restaurant
Olives, in 1989, to having my three amazing
children Oliver, Isabelle, and Simon.
Every aspect and experience thus far has
contributed to who I am today.
Has being a chef helped you become a
more successful entrepreneur? Which role
do you prefer?
Todd: For me the preference is always
cooking. The two have sort have become
intertwined for me over the years - to me
there is not one without the other. Being
an entrepreneur is fun because it allows
me to showcase my food and style through
different avenues. At the end of the day,
though, I would be happy cooking for my
family on Sunday afternoon.
How many restaurants do you own, and
do you have any favourites?
Todd: We have 22 restaurants around the
world at this point, and I’m excited to be
working on some new projects this coming
year. We have a team that helps me oversee
the different properties, and I am in regular
contact with all of my chefs at the different
properties. As for favourites, that’s like
asking me my favorite kid!
And your plans for the UAE…?
Todd: We are opening Olives in Abu Dhabi
this year at Venetian Village at the Ritz
Carlton, and we will be opening a Todd
English Food Hall next year in Dubai.
Is there a signature “Todd English” feel to
all your restaurants?
Todd: It’s more about how guests are
treated in our restaurants and the
impression they leave with after their
dining experience. Whether you’re at one
of our upscale concepts like Olives, or a
more casual concept like the Todd English
PUB, we want every guest to feel the
genuine warmth of the English hospitality
experience. We have a certain high-level
design inspiration that flows through to
each of our different concepts. The goal
is not for this to be obvious, but be rather
subtle and seamless.
Do you have a favourite cuisine?
Todd: Generally speaking I love
Mediterranean cuisine but I’m also
fascinated by the flavour profiles of Asian
cuisine. I use Za’atar a lot and Aleppo
peppers. Part of the reason I love opening
new restaurants in places like the UAE is it
affords me more time and ability to further
explore the region and expand our culinary
depth and breadth.
What is the secret to your success?
Todd:It all starts with the quality of
ingredients, especially when you are
working in different parts of the world.
Beyond that, it’s all about attention to
detail, and an excellent team to execute our
brand philosophy. That being said, quality
and consistency are constantly something
we are evaluating and trying to
improve upon.

Jewellery Photography
Making your jewellery photographs fabulous can set your images apart from the competition. It is said that you never get a second
chance to make a first impression, and so it is with how you present a valuable object. Set up the camera from a new angle and use
controlled lighting to highlight the detail of your product; try different props and backgrounds to increase the impact of your image; and
choose the right macro lens or extension tube with the correct ring flash light.

The members of the
Abu Dhabi Anime
Club are brought together
by the love for Japanese
culture. They channel
anime to express their
passions and to improve
themselves, says one
of the club’s leaders,
Naureen Kamal…
TEMPO: How did the Abu Dhabi Anime
Club start?
Naureen: The club was founded by Amy
Zimmermann in 2004, but the members
came together in 2005. The current
president is Abigail Kerr.
We were still going to school and our
club gave a new dimension to our lives.
The club gives gamers and anime lovers
a platform where they can share their
interest, love and seize the opportunity to
feel comfortable with like-minded people.
Anime helps us to motivate each other yet
also hone our skills.
Amy returned to USA in 2006, leaving
the club in our care. We now have 30 to
40 active members who join us for any
event, whether it’s file-sharing of games,
J-Rock and J-Pop music or previewing
anime. Apart from people who live in
the UAE, we also have members from
Egypt,Syria,Pakistan,Somalia, Sudan,
Bangladesh, Philippines, USA, Morocco,
Saudi Arabia, Italy and Japan.
TEMPO: What does the club do?
Naureen: We arrange meet ups and file-
sharing regularly. Our members join us
for an evening of games and socialization.
We also have many talented artists who
come in and share tips with our members.
We hold anime previews, discuss anime
and cosplay. Actually, two of our Emirati
members have trained in the Japanese Tea
Ceremony and even treated us to a delicate
experience.
We have been very active on the social
platform since 2010 and arrange the
cosplay competition at the World Games
Championship as well. We have been the
first group to cosplay since 2008 at the
World Games Championship held at Dubai
World Trade Centre.
TEMPO:Why is Anime, a Japanese
phenomenon, relevant to the UAE?
Naureen: Anime can inspire anyone to be
motivated and never give up. It has always
highlighted family ties, love and what
one would do to protect them. The UAE
comprises many nationalities and I am sure
that simplicity, love and the will to never
give up is a universal theme that each of us
can identify with.
TEMPO: What do the UAE and Japanese
cultures have in common?
Naureen: The UAE culture is also very
hospitable to their guests. Both cultures
respect elders, and both have traditions
and cultures, which are upheld with
pride. One example is the tea or coffee
ceremony,which is considered important
in both countries. In both cultures, the
hosts, as well as the guests, are required to
practice utmost respect by removing their
shoes before they enter.
TEMPO: What are your upcoming events?
Naureen: Soon we will be having our file-
sharing and gaming hangout. Further on,
we plan to host an anime movie screening
and host a joined table - as exhibitor- with
Off-topic at Comic Con. We also have our
annual Iftar gathering where we screen an
anime movie for our members and they get
to participate in games and win mini prizes.
TEMPO: What is the best part about
Japanese culture?
Naureen: Its simplicity and transparency.
TEMPO: What is cosplay?
Naureen: It’s a very creative activity. It
definitely tests your patience and helps one
improve with practice. It brings a favourite
character to life and makes one feel like you
are that character when you are in their
garb. It is very demanding as it involves
sewing, stitching and crafting. With effort
you can be as perfect as possible, so it is
very rewarding.
TEMPO: How do your families feel about
this group?
Naureen: Feelings differ from family to
family. Many of our members have very
supportive family while many are can’t
understand what the club is about. Few of
the families fail to see the advantages of
building community through the club. Most
of our members are very talented, whether
they are involved in manga or aregraphic
artists. They may be a cosplayer, playing a
musical instrument,singorwrite stories.
TEMPO: How can people join your group?
Naureen: Through our Facebook page -we
are Abu Dhabi Anime Club (J-AMFM). They
can send us a message and can come visit us
at Artist Alley in ComicCon 2015 this April.
We want to tell people that if you wish
to belong to a community where you get
to speak all about your favourite games,
manga, anime, Japanese culture, J-Rock
and J-Pop, or you simply want to be
surrounded by creative, friendly and
interesting people, commonly addressed as
“Otaku,” then this is the place for you!

there is Julian Barnes’s
The Sense of an Ending:
the novella that has it
all. Literature, hope,
dreams, love, theories –
as well as
memorable characters.
The 2011 Man Booker Prize
Winner enchants its reader from
the very first page. It opens with a
fervent, outreaching, group of three
teenagers who meet Adrian Finn
– an intellectual who’s arguably
‘smarter than his age’ – until
he is absorbed into their clique.
Hungry on knowledge and all
that proportionate it, they would
participate in the discussion of
science and literature, their own
theories, and often outsmart their
teachers and even themselves. They
swear to keep in contact after graduation – which is typical and even optimistic.
The storyline then follows their college life and middle age, all told through the
memory of the narrator, Tony Webster. Except… their lives don’t turn out as they
thought it would. They expected lives as note-worthy as that of the philosophers and
of the writers they used to quote. They thought they were different.“Yes, of course
we were pretentious – what else is youth for?” For one, Tony undergoes the traditional
process of life: the career, the family, the divorce. It all happens in passivity, until he
receives a letter from a lawyer, taking him back 40 years into the past, and time spent
as a teenager.
This novella is great entertainment, but also quality literature. The sentences are
flawless in style and fluency. Every page leaves the reader at once staggered and
elevated, as we trace a story that lights a fire in our hearts that dims as our characters
age, their lives of ending up banal and mundane. What makes this novella different,
and a great read, is that it speaks to the soul a magical
“I remember a period in late adolescence when my mind would make itself drunk
with images of adventurousness. This is how it will be when I grow up. I shall go there,
do this, discover that, love her, and then her and her and her. I shall live as people in
novels live and have lived. Which ones I was not sure, only that passion and danger,
ecstasy and despair (but then more ecstasy) would be in attendance. However...who
said that thing about ‘the littleness of life that art exaggerates’?”

wake up, but she cursed the Chairman.
‘Keep a civil tongue,’ I said, ‘if you want to
keep your job.’
‘Madam, what do I care? I have not been
paid for months.’
I explained to her that the Chairman will
solve all our problems. Her salary will be
paid and there will be no need to sell this
villa. He controls a bank.
‘He will squeeze you before you squeeze
him, this kind of man,’ she said.
I wondered why she hated him so. Perhaps
he had also made a pass at her.
We went into the kitchen. I had bought
free range eggs and honey from Hadramaut
Mountain, Shitaki mushrooms, goat cheese.
‘I want you to make a dream omelette,’ I
said, ‘light as a cloud inside but crisp on the
outside and sprinkled with coriander.
‘If the omelette was only for him, I’d spit in
it.’
Then the door rattled and it stopped me
from scolding her.’
‘Go and see if he’s come.’
She went and returned a minute later.
‘Nothing. Only the wind, Madam. And did
you really expect him to come this early?’
The wind had swept over the lake, circled
the house and come to the door. It was
still dark outside. I began to prepare a fruit
salad. The cherries reminded me of that
heroine who was trying to save her Cherry
Orchard. But this man coming for breakfast
was no Lopahin. He was some monster.
‘Last time, he pinched my bum,’ Vanessa
said. ‘I opened the door for him and the
moment I turned my back he pinched my
bum.’
‘Are you sure it wasn’t an accident?’
‘How can you pinch someone’s bum by
accident? You show me.’
‘I am in no mood for a demonstration,
Vanessa.’
‘I just want you to be careful, Madam.’
‘We have to be pragmatic here. The man is
no angel, but he can....’
The doorbell rang.
‘Open the door, Vanessa, but be careful.’
‘Perhaps with this chopping board I can
protect my bum.’
That precaution was not necessary, after
all, as the caller turned out to be the baker
who had come to deliver fresh croissants.
Their smell was good.
‘If Madam opens a coffee shop I will be a
waitress.’
‘Still need to borrow money.’
We heard the call for the morning prayer.
‘I guess he’ll come after the prayer,’ I said.
‘Does he pray?’
‘His sort always do.’
‘What if he doesn’t come’said Vanessa.
‘Don’t even think it.’
He doesn’t want breakfast. Only made a
pass at you.’
I raised my hand.
‘Go on, Madam. Slap me.’
‘Not before we eat a good breakfast,’ I said.
‘We eat here, in the kitchen?’
‘No. On the patio overlooking the lake,’ I
said.
‘And the Chairman?’
‘We are not waiting for him. Perhaps he
lost his way.’

Near the equator, in a place ofheat and drought, people lived in housesmade of
arish, a plant that protected them from the hot sun by day and the cold frost
by night. There in the desert lived a lonely old widowcalled Osha, who spent her
life helping women deliver their babies. Her charming smilehid the misery that
she had suffered since her husband’s death.
One night under a full moon, she reached home feeling very tired. As she lay down
on her bed, she fell into a deep sleep.
She awoke to a strange knock on the door.”Who is it?” she asked, but there was no
answer. She opened her door to see two strangeblack women. They grabbed Osha’s
arms and took her outside the village to a huge ghaf tree.
“Who are you, my dears?” Osha asked. “Our queen is distressed and you must do
something,” they replied. They swept Osha upoff the ground and into a castle that sat
at the top of the tree.
Two soldiers took Osha to the Queen’s chamber. Outside the room, a large crowd
of people were screaming and crying. As the doorsopened, Osha saw the pregnant
queen, exhausted and dangerously ill. She tried to save the baby but to no avail.
Then, a strange voice cried, “The Queen is Dead!” The doorsflewopen and there
stood the King. He said a few strange words and clapped his hands twice.
Suddenly, Osha landed back on the ground with a thud. For the next year, the
villageignored her because whenever she tried to help women give birth, they
would die. Confused and frustrated, Osha decided to see the Sage. When she told
himher story, he explained that the strange people were jinn. After losing their
queen and her baby, they had killedall the women that Osha had helped. Her
misery multiplied until her final days. In the end, Osha died alone in the desert, with
her spirit wrapped around the ghaf tree.
“They swept
Osha upoff the
ground and into a
castle in the tree.”

Filmmaking is the
visual art of creating
immortalizing moments
and captivating scenes.
Whether it’s a dying scene
of one of your favourite
characters, or a You Shall
Not Pass cliffhanger -
audience can be kept on
the edge of their seats
wondering what’s going
to happen next. The power of filmmaking isn’t just about pressing
the record button, it is about utilizing the ability to make people see
things in new ways. From travelling across the world to document
a powerful story, to creating simple yet engaging vlogs of a day in
your life, filmmaking is a tool for creativity and magic.
The UAE Filmmaking industry is still in its nascent stages – the country hasn’t fully
grasped the full production of blockbuster films. However, leading Emirati filmmakers like
Nayla Al Khaja and Ali F. Mostafa are making their mark by producing some of the most
popular feature films in region. Entities such as twofour54 are a hub of creativity and are
bringing exciting foreign movies to be filmed here.
Unfortunately it is a difficult industry for young talent to break into. You need more
than passion and ambition to make it happen. UAE media student and filmmaker Khalifa
Sultan Almatrooshi is an aspiring young talent in the UAE. He is a huge film fan and is
working on making a movie. He offers the Emirati perspective of those in the filmmaking
trenches, struggling trying to make it…
“The movie I want to create is different than the rest of the films around here, and if I will
be able to make one hopefully it will be successful and the people will understand what
I’m trying to do and the idea I’m trying to deliver,” he says with confidence. “For example, I
have always watched movies since I was a child, but back then I didn’t care or realize what
was going on or what the story was about, but later when I grew older I realized what
movies were about.
“In modern days, movies and televisions have a great influence on people’s behaviour.
The movies play an essential role; watching movies is enjoyable and entertaining. It
touches people’s souls and offers an escape into fantasy world. Film is not only a piece of
art but also a tool of social reform as it expresses the feelings of humans and their idea of
contemporary society. Film is the mirror that reflects society.”
“I’m a big fan of films, all kinds of them. I started watching films when I was just a child
and not just as a fan. I would like to make one or more in the future and change the
original idea of making films in the world of Arab media. Hollywood took a big leap in
making movies using the latest technology. The world of Arab media should produce
movies with more innovation and creativity by using newer technology which would
only available by investing more money into the film industry”.
We look forward to seeing Khalifa’s hopes and dreams brought to the big screen.
The Year of Innovation:
Seeking a Meaningful Definition
Filmmaking

start with
innovation the power of
Since the UAE has declared
2015 to be ‘the year of
innovation” we decided to
delve into the root of the word
and seek a definition...
The term innovation has become so
ubiquitous it is heard everywhere, to
describe almost anything. You see it on
TV, newspapers, billboards, for everything
from cosmetic products to banking services.
Politicians, professors, businessmen and
journalists have also embraced this word
and are applying it to a myriad of contexts.
Let’s start by looking at the origin of the
word… it comes from the latin “in+novare,”
which means “make something new”. Since
there are lots of definitions of innovation,
let’s start with one that can be applied to
business: “Innovation is a new idea that
results in profit”.
In other words, innovation facilitates the
conversion of knowledge to earnings. It
can also be linked with inventions that
are converted to market products. So, it is
not enough to create something new –the
market dynamic is necessary.
We can also help to define innovation by
stating what it is not: ‘innovation’ isn’t
necessarily ‘invention’. It is important to
differentiate between innovation and
invention: ‘’invention’ is the first emergence
of idea, but ‘innovation’ is the first attempt
to make it; innovation can also be the usage
of an existing invention. Innovation is not
only the production of new products, but
also a new way of doing certain things, with
the aim of introducing improvement. In the
case when invention improves a product,
or service, or process, we can say that
invention is transferred to innovation.
Innovation can be small or big,
simple or complex. We can talk
about innovation that started with a
disruptive idea, but it can also occur
when just small changes are done on
an existing product that must at least
be measurable.
The biggest obstacle to innovation
within many organizations is that
the company’s culture must be able to
accept, and integrate, new ideas from
employees.
Innovation is also the application of
knowledge to existing problems, and
putting ideas to market. There is a
different situation with an invention
or a discovery; wherein the customer
is not the inventor’s primary focus.
However during the innovation
process, the customer must be the key
factor, because innovation works best
when has a ‘target’ and a ‘market’.
Many companies place employees
as the most significant origin of
innovative ideas. The next source
of innovative ideas must surely be
business partners and customers?
It is important that the customer be the
focus of an innovation. Looking at the
source of ideas, inventions often come
from inventors’ effort and can emerge
as a result of lengthy experimentation.
With luck, sometimes it is stumbled
upon. But for innovation to make a
difference, it must be developed, and
fully realized. Joseph Schumpeter, a
well-known economist from the 20th
century saw innovation not as the
creation of mind, but of human will.
