Bran:
The Bran of a Cereal Grain
is the multi-layered outer
skin or husk of the Kernel.
It assists in protecting the
other parts of the kernel
from sunlight, pests, water,
and disease. It contains
fibre, important
antioxidants, iron, zinc,
copper, magnesium, B
vitamins, and
phytonutrients.
Endosperm:
The Endosperm of the
Kernel is the largest
portion. It contains
starchy
carbohydrates, protei
ns, and small
amounts of vitamins
and minerals.
Germ:
The Germ is the
embryo of the Kernel
and if it is fertilized by
pollen it will sprout
into a new plant. The
Germ contains B
vitamins, proteins, fats
, irons and
carbohydrates.
