How Race, Age and Gender Shape Attitudes Towards Mental HealthThinkNow
Mental health has been in the news quite a bit lately. Dozens of U.S. states are currently suing Meta for contributing to the youth mental health crisis by inserting addictive features into their products, while the U.S. Surgeon General is touring the nation to bring awareness to the growing epidemic of loneliness and isolation. The country has endured periods of low national morale, such as in the 1970s when high inflation and the energy crisis worsened public sentiment following the Vietnam War. The current mood, however, feels different. Gallup recently reported that national mental health is at an all-time low, with few bright spots to lift spirits.
To better understand how Americans are feeling and their attitudes towards mental health in general, ThinkNow conducted a nationally representative quantitative survey of 1,500 respondents and found some interesting differences among ethnic, age and gender groups.
Technology
For example, 52% agree that technology and social media have a negative impact on mental health, but when broken out by race, 61% of Whites felt technology had a negative effect, and only 48% of Hispanics thought it did.
While technology has helped us keep in touch with friends and family in faraway places, it appears to have degraded our ability to connect in person. Staying connected online is a double-edged sword since the same news feed that brings us pictures of the grandkids and fluffy kittens also feeds us news about the wars in Israel and Ukraine, the dysfunction in Washington, the latest mass shooting and the climate crisis.
Hispanics may have a built-in defense against the isolation technology breeds, owing to their large, multigenerational households, strong social support systems, and tendency to use social media to stay connected with relatives abroad.
Age and Gender
When asked how individuals rate their mental health, men rate it higher than women by 11 percentage points, and Baby Boomers rank it highest at 83%, saying it’s good or excellent vs. 57% of Gen Z saying the same.
Gen Z spends the most amount of time on social media, so the notion that social media negatively affects mental health appears to be correlated. Unfortunately, Gen Z is also the generation that’s least comfortable discussing mental health concerns with healthcare professionals. Only 40% of them state they’re comfortable discussing their issues with a professional compared to 60% of Millennials and 65% of Boomers.
Race Affects Attitudes
As seen in previous research conducted by ThinkNow, Asian Americans lag other groups when it comes to awareness of mental health issues. Twenty-four percent of Asian Americans believe that having a mental health issue is a sign of weakness compared to the 16% average for all groups. Asians are also considerably less likely to be aware of mental health services in their communities (42% vs. 55%) and most likely to seek out information on social media (51% vs. 35%).

Congelación, metodo de conservación más antiguo y ampliamente
usado en los alimentos.(sabor, textura y valor nutricional)
(Delgado & Sun, 2001)
La calidad de los productos congelados depende de la cantidad,
tamaño y distribución de los cristales de hielo dentro del material.
La Congelación asistida por campo eléctrico estático (ESF)
permite controlar la nucleación del hielo y se aplica de forma
remota y uniforme sobre la muestra.(Orlowska, 2009; Stan, Tang,
Bishop, & Whitesides, 2010)
Existen dos explicaciones basadas en simulación dinámica
molecular y leyes termodinámicas para describir el mecanismo
del proceso de cristalización bajo un campo eléctrico.
(Shevkunov & Vegiri, 2002; Vegiri, 2004a, 2004b).

Congelamiento y su posterior descongelamiento : Pérdida por goteo, textura y color.

- Carne de solomillo de cordero
(Gluteus medius) se compró en el
supermercado local y se almacenó a 4
°C hasta su uso.
- Muestras: se prepararon en forma de
cilindros con un diámetro de 10 mm
y una altura de 10 mm. El peso medio
de las muestras de carne fue de 2,3 a
2,5 g.
- El contenido de humedad total se
determinó por el método de secado
(AOAC, 1995).

2.2 Congelación bajo Campo Electrostático

Procedimiento:
- El portamuestras se preenfrió a 5 °C en una incubadora fría durante 1h antes del inicio de la medición.
- La muestra de carne se instaló en el centro del portamuestras (celda de medición).
- El montaje experimental se colocó dentro de un túnel de congelación con circulación de aire forzado a
-20 °C. Los voltajes aplicados fueron 0, 4, 8 y 12 kV.
Después de congelar, las muestras se
pesaron y cubrieron con una película de
polietileno para evitar la evaporación de la
humedad y se dejaron en reposo en una
incubadora fría a 5 °C durante 3 h, luego
se analizó el color, la pérdida por goteo y
textura.

2.3 Pérdida por Goteo 2.4 Color
La pérdida por goteo se calculó sobre la base
de la diferencia de masa entre la muestra
congelada (W1) y la muestra descongelada
(W2). La pérdida por goteo se expresó como
porcentaje de pérdida de peso utilizando la
ecuación. (1).

- Color de la superficie de las muestras de carne: antes
del procesamiento (forma fresca) e inmediatamente
después de la congelación y descongelación. Se midió
usando un colorímetro. Para cada color se tomaron tres
medidas en diferentes lugares de la superficie de la carne
y se calculó su promedio.
- El instrumento midió: L* (luminosidad), a* (rojez) y b*
(amarillez). La diferencia de color total (ΔE) entre la
muestra descongelada y la muestra fresca se evaluó
usando la ecuación. (2):
L*, a* y b* son los valores de color de la muestra descongelada y
L0*, a0* y b0* son los valores de color de la carne fresca.

3.1 Tasa de Congelación
Los contenidos de humedad de muestras de carne se
encontraban en un rango de 74-75% lo que indica la
uniformidad del contenido de agua . Además, no había
cambios significativos de las muestras de control con
respecto a la tasa de congelación. Estos resultados se
esperaban ya que la congelación asistida por microondas
no causa efectos térmicos significativos.

La velocidad de congelación es un
parámetro determinante en la calidad
final de las comidas congeladas. Una
velocidad de congelación rápida evita la
migración del agua produciendo finos y
numerosos cristales de hielo
(Le.Bali,2004)

3.2 Color
El color es un indicador de frescura y
salubridad de la carne, es por ello que se tiene
de guia la tabla 4 el cual muestra los cambios
del color respecto a los parámetros, por
consiguiente se observa que las carnes
congeladas son más oscuras que las frescas,
esto podría deberse a la concentración de
pigmentos durante el proceso de congelación.

3.3 Análisis de Microestructura de Cristales de hielo
La figura muestra las micrografías del músculo de solmillo de cordero. La tabla 5 muestra el área relativa total de hielo y el diámetro equivalente
disminuyeron con el aumento del voltaje, pero el campo electrostático fue significativo solo en el diámetro equivalente y la redondez. el diámetro
equivalente promedio de los cristales de hielo en la carne de cerdo durante los tratamientos ESF fue de 32,79 ± 4,04 μm para el control a 14,55 ±
8,20 μm para la muestra congelada a un voltaje de 12 kV, respectivamente.

La pérdida por goteo no mostró una diferencia
significativa con el aumento del voltaje.El
cambio en la pérdida por goteo podría estar
relacionado con el tamaño del cristal de hielo.

Entre los atributos de la textura, la dureza es el
más importante para el consumidor, ya que
determina el valor comercial de la carne
(Chambers & Bowers, 1993; Ruiz de
Huidobro et al., 2005)

- La congelación bajo campo electrostático mantuvo la dureza y la microestructura de la carne de
cordero, y redujo la pérdida de goteo sin impacto negativo en el color de la carne después de la
descongelación.
- El campo electrostático no tuvo un efecto significativo en la velocidad de congelación, lo que
indica que el campo electrostático no tiene efectos térmicos significativos.
- Una potencial aplicación real del campo electrostático en la congelación de la carne de cordero,
ya que permite mantener la calidad durante la congelación.

La congelación lenta favorece la
formación de cristales grandes de
hielo lo cual propicia el “goteo”
durante la descongelación

En la congelación con aire forzado
la carne debe estar protegida,
