2. HISTORIA DE LA TORRIJA Ya Juan del Encina en el s. XV, hablaba de las Torrejas. En el siglo XIX y en al comienzo del XX, se servían torrijas con un vaso de vino tinto en las tabernas. Preparación -Cortar la barra de pan (mejor si es de un día o dos antes) en rebanadas de unos 2cm de grosor. -Se cuece leche con azúcar, canela y una corteza de limón. -Se vierte la leche caliente sobre las rebanadas de pan. -Después se rebozan en huevo batido y se fríen en aceite de oliva, dando la vuelta por ambos lados. -Una vez fritas se introducen en un jarabe previamente preparado con agua, azúcar, vino dulce, y una cucharada de miel. Se puede cambiar la leche caliente por vino. También se pueden espolvorear con azúcar y canela. O, mejor aún, una vez frías, bañarlas en leche con azúcar y canela.
