1. Solomillo de novillo con castañas, chalotas, pera y salsa al vino dulce Pedro Ximénez
Veal tenderloin with chestnuts, shallots, pear and Pedro Ximénez sweet wine sauce

■■Ingredientes para 4 personas:
●●4 medallones de solomillo de 125 gr cada uno
●●2 peras
●●12 castañas cocidas peladas
●●12 chalotas pequeñas
Salsa:
●●600 ml de fondo de ternera
●●200 ml de vino tinto
●●200 ml de vino Pedro Ximénez
●●50 ml de salsa de soja
●●1 cabeza de ajo
●●1 cebolla morada
●●1 rama de romero, 1 rama de tomillo y 1 hoja de laurel
●●3 gr de pimienta negra en grano
●●Maizena exprés
■■Elaboración:
● Salsa: En una cazuela dorar la cabeza de ajo cortada en dos y la cebolla
cortada en juliana, añadir los vinos y la salsa de soja, dejar hervir hasta que
se reduzca a 1/3. Añadir el fondo y volver a reducir a 1/3. Colar, poner a
punto de sal y espesar con maicena si es necesario.
● Limpiar las peras y las chalotas, cortar las peras en rodajas de 1 cm. y
hacer a la plancha a fuego fuerte hasta que tomen color y terminar en el
horno a 225 ºC, 20’.
● Calentar las castañas con un
poco de salsa, dándoles vueltas
para glasearlas.
● Salpimentar los medallones
de solomillo y hacer en sartén
con un poco de aceite de oliva,
hasta el punto deseado. Dejar
reposar 1’.
●●Emplatar los solomillos con las
guarniciones alrededor y la salsa
sobre éstas.
■■Ingredients for 4 servings:
●●4 tenderloin medallions of 125 g each
●●2 pears
●●12 boiled and peeled chestnuts
●●12 small shallots
Sauce:
●●600 ml veal stock
●●200 ml red wine
●●200 ml Pedro Ximénez wine
●●50 ml soya sauce
●●1 bulb of garlic
●●1 purple onion
●●1 sprig of rosemary, 1 sprig of thyme and 1 bayleaf
●●3 g black peppercorns
●●Express cornflour
■■Instructions:
●●Sauce: Cut the bulb of garlic in two and shred the onion into a julienne. Brown
in a saucepan, add the wine and the soya sauce, and leave to boil until reduced to
one third. Add the stock and reduce again to one third. Strain, add salt to taste and
thicken with cornflour if necessary.
●●Pit and clean the pears and shallots. Cut the pears into 1 cm slices, place them
on a hot grill until they start to turn colour, and finish by baking for 20 minutes in
a 225ºC oven.
●●Heat the chestnuts in a little
sauce, turning them over so that
they glacée.
●●Salt and pepper the tenderloin
medallions, and fry them as
desired with a little olive oil
in a pan. Leave to rest for one
minute.
●●Arrange the tenderloins on
the plate with the garnish around
them and the sauce on top.
