Septiembre 2017 #2 – El Muelle
El muelle es estratégico para el matadero, pues por ahí inicia la faena. Por ello, sus
operaciones deben ser correctamente dibujadas y controladas muy de cerca para evi-
tar consecuencias técnicas y económicas negativas para la empresa.
El muelle necesita un mantenimiento preventivo
calificado que le asegure un alto grado de confia-
bilidad operacional a los equipos y a la cadena,
del inicio al fin de la matanza. Como beneficios, se
anulan los contratiempos, se permite que la planta
arranque en horario, diariamente, y se contribuye
para el cumplimiento de la programación de faena y
ventas del día. Los retrasos al iniciar la faena y las
paradas durante el turno por carencia de manteni-
miento bajan la eficiencia del matadero, elevan los
costos operacionales, reducen la competitividad de la
empresa, afectan el personal e impactan la calidad y
el rendimiento de canal.
Usar iluminación natural, artificial o penumbra es una opción de cada empresa.(1)
¡En Brasil,
la iluminación natural y la artificial son las más comunes! Si las cargas vivas se bajan al
muelle, en parte o todo, habrá que cuidar su confort térmico, para reducir el riesgo de
mortalidad, bien cómo faenarlas por su orden de llegada, para contener la merma.
¡Un tercio de los defectos de canal son atribuibles al matadero! Luego, es necesario
proteger las aves mientras están vivas, asegurándoles una descarga de bajo impacto,
armonizando el equipo de colgado al puesto de trabajo y a la velocidad de faena, disponiendo
de una pechera (o madre) en la línea y practicando un enganchado suave. A los operadores
igualmente hay que cuidar, para que se sientan respetados, cómodos y retribuyan con
un trabajo cuidadoso. Preservar la calidad del aire ambiente, asegurarles su confort tér-
mico, proveerles equipos de protección individual y adoptar la rotación de funciones son me-
didas que aportan a su bienestar físico y emocional.(2)
El supervisor es el responsable del muelle, luego debe ser el primer a llegar y el último
a irse. Su función le exige el conocimiento de los procesos, de sus variables y de cómo ellas
interactúan entre sí, bien como la habilidad de capacitar, aglutinar, motivar y conducir el
equipo hacia los objetivos diarios del trabajo y de saber reconocer sus logros y ocuparse de
sus debilidades y necesidades. Durante el turno, necesita estar atento y pendiente de todo
su entorno (del inglés, “management by walking around”), y cuando necesitar intervenir en el
proceso, debe raciocinar holísticamente, actuar preventivamente, siempre que posible, y re-
gistrar formalmente las eventuales anomalías para fines de posterior correcciones.
