12. El consumo de azúcar en grandes cantidades, tiene un impacto
directo en nuestras habilidades cognitivas y en la habilidad que
tenemos de controlarnos a nosotros mismos: este componente
tiene efectos similares a los de las drogas en el centro de
recompensa de nuestro cerebro.
13. Los científicos han llegado a la conclusión de que los alimentos
dulces, junto con los alimentos con exceso de grasas malas,
pueden producir efectos similares a la adicción en el cerebro
humano, provocando la pérdida del autocontrol, la
sobrealimentación y en consecuencia el aumento de peso.

hallazgo: cuando fueron alimentadas con dietas altas en azúcar,
el cerebro de las ratas liberaba menos de un determinado
químico que ayuda a los cuerpos a tener autocontrol, por lo que
eran menos capaces de dejar de comerlo.
18. Esas ratas saturadas de azúcar tampoco eran tan buenas en
ciertas tareas de memoria, lo que mostró que ciertas
funciones cerebrales en el área prefrontal y el hipocampo
estaban dañadas como consecuencia del exceso de azúcar.

26. El azúcar NO es necesario desde el punto de
vista evolutivo. Aunque según la OMS
necesitamos menos de un 10% de la ingesta
calórica total esto significa que, si ingerimos
diariamente unas 2000 Kcal, la ingesta de
azúcares libres debería ser como máximo
de 50 gramos al día. Aunque la cantidad
puede variar de niños a adultos:

de ánimo: en los jóvenes sanos, la

personas con diabetes tipo 2 informaron un aumento de
los sentimientos de tristeza y ansiedad durante la
hiperglucemia aguda (niveles elevados de azúcar en
sangre). Uno de los estudios más grandes para relacionar
el azúcar con la depresión, en base al análisis del consumo
dietético y el estado de ánimo de 23 245 sujetos que
participaron en una investigación científica determinó que
las tasas más altas de consumo de azúcar se asociaron con
un mayor padecimiento de la depresión.

Scientific Reports, determinó que
aquellos con el mayor nivel de consumo
de azúcar tenían un 23% más de
probabilidades de ser diagnosticados
con un trastorno mental que los sujetos
con menor ingesta.

34. Los azúcares en la sangre, al unirse a las proteínas,
llevan a cabo un proceso conocido como
glicación, y que tiene como resultado unos
compuestos llamados productos finales de
glicación avanzada (conocidos como AGE, por sus
siglas en inglés). Esto es natural, pero uno de sus
efectos es la muerte celular y, por lo tanto, el
envejecimiento.
35. Si se consume azúcar en exceso, todo este proceso se acelera, lo que provoca que las
arrugas y otras marcas con del paso del tiempo aparezcan antes. La glicación también
altera la calidad del colágeno. Además de una mayor cantidad de líneas faciales, esto
contribuye con que el aspecto de la piel sea más seco y apagado.
Más aún, los azúcares promueven la inflamación, y esto aumenta el riesgo de sufrir
trastornos dermatológicos como el acné y la rosácea, sobre todo en personas propensas
a estos problemas.
