l ambiente huele a fiesta. El invierno es la temporada ideal para estar con aquellos que
más queremos y estoy convencida que no debe, o no debería existir una celebración
sin estar acompañada de burbujas. Ya sean de un champagne, un cava, un sekt o un
sparkling wine, en todo el mundo se elaboran vinos con burbujas. Sus diferencias se deben
en primer lugar al nombre y en segundo al método de elaboración. ¿Cuál es la diferencia o
similitud entre ellos?

En cuanto al nombre, es importante recordar que sólo podemos
denominar Champagne al producido en la zona de Champaña
en Francia, sin embargo, en México, Estados Unidos, Australia,
Sudáfrica, Alemania o incluso en la Patagonia, se están elaborando
extraordinarios vinos espumosos.
Las uvas que se utilizan varían dentro de las regiones donde se
produce el vino. Por ejemplo, para el Champagne, el blend que se
utiliza para pertenecer a la Denominación de Origen es la de Pinot
Noir, Pinot Meunier y Chardonnay. Mucha gente se sorprende al
razonar que es una mezcla conformada por dos uvas tintas y una
blanca. Sin embargo, debemos recordar que el pigmento del vino
proviene del hollejo; si no se deja reposar junto el jugo, entonces
no se obtiene color. ¡Es así como este es el vino blanco de uvas
tintas más famoso del mundo! Por otro lado, si el consumidor
lee en una etiqueta Blanc de blancs, eso significa que es un vino
blanco hecho exclusivamente con uvas blancas (forzosamente
Chardonnay), y si lee Blanc de noirs, eso significa que se hizo con
uvas tintas antes mencionadas.
Un vino espumoso muy popular en Europa es el Cava, producido en
España. La mezcla de uvas común es la conformada por Parrellada,
Macabeo y Xarel-lo principalmente -todas ellas blancas-, logran un
vino de excelente calidad y fama mundial. En Italia, el Prosecco,
elaborado principalmente en la región del Véneto y a partir de la uva
Glera, es muy apreciado y tiene el título de ser el vino espumoso más
vendido del mundo. En Alemania, Austria, o la República Checa, el
Sekt se produce generalmente con la uva Riesling.
Siempre que haya un motivo para celebrar, recomiendo abrir una
botella de burbujas. O como sabiamente exclamó Napoleón: “En la
victoria lo mereces y en la derrota lo necesitas…”. Felices Fiestas.

wines with bubbles are made worldwide. Their differences are due, first, to the name,
and second to the method of production. What is the difference or similarity between
them?

As for the name, it is important to remember that we can only
call Champagne the one produced in the region of Champagne
in France, however, in México, United States, Australia, South
Africa, Germany or even in Patagonia, extraordinary sparkling
wines are being developed.
The grapes that are used vary within the regions where wine
is produced. For example, for Champagne, the blend used to
belong to the Designation of Origin is the Pinot Noir, Pinot
Meunier and Chardonnay. Many people are surprised when
they reason that it is a mixture of two red grapes and one white.
However, we must remember that the pigment of the wine comes
from the skins; if these are not let to rest with the juice, then the
color is not obtained. That is how this is the most famous white
wine in the world made from red grapes! On the other hand,
if the consumer reads on a label Blanc de blancs, this means
that it is a wine made exclusively with white grapes (necessarily
Chardonnay), and if he reads Blanc de noirs, that means it was
made from red grapes mentioned above.
A very popular sparkling wine in Europe is the Cava, produced
in Spain. The common mixture of grapes is mainly made up
by Parrellada, Macabeo and Xarel-lo -all of them white-, they
achieve a wine of excellent quality and world fame. In Italia,
Prosecco, mainly made in the Veneto region from the Glera

La Grande Dame se creó en 1972 para celebrar el

Es intenso en color con destellos dorados y burbujas
muy pequeñas. En nariz se percibe fruta fresca y notas
tostadas como avellanas y almendras rostizadas.
Disfrútala como aperitivo.

Moët & Chandon Grand Vintage 2006
Con un blend de Chardonnay, Pinot Noir y Pinot Meunier
este excelente Champagne muestra un color amarillo dora-
do muy brillante. En nariz encontramos notas de durazno
blanco, limón, piña y peras armonizadas con notas de flor
de naranjo. Ideal para acompañar alimentos como salmón
ahumado, quesos añejos, mariscos y pescados grasos.

Dom Pérignon Plénitude 2 1998
Made in the region of Epernay, France, with Pinot Noir and
Chardonnay grapes. Drinking it is a memorable experience,
abundant in penetrating sensations and fresh emotions.
Its aromatic presence is persistent thanks to its almost 14
months in the cellar for a second fermentation.

Veuve Clicquot La Grande Dame 2006
La Grande Dame was created in 1972 to celebrate the
bicentennial of the Veuve Clicquot Ponsardin house.
It is intense in color with gold sparkles and small
bubbles. On the nose you can perceive fresh fruit and
toasted notes like roasted hazelnuts and almonds.
Enjoy it as an aperitif.

Moët & Chandon Grand Vintage 2006
With a blend of Chardonnay, Pinot Noir and Pinot Meunier
this excellent Champagne shows a very bright golden yellow
color. On the nose we find notes of white peach, lemon,
pineapple and pears harmonized with orange blossom
notes. Ideal with foods like smoked salmon, aged cheeses,
seafood and fatty fishes.
