1. Introducción
El vino es una buena posibilidad para industrializar las frutas, en
este caso se describe una producción a pequeña escala, usando
tecnología muy simple: para la preparación de los mostos se
necesita una licuadora industrial, los procesos fermentativos se
llevan a cabo en depósitos de plástico para alimentos y el
embotellado es manual.

2. Materia prima e insumos
Agua Hervida
Se deber hervir con un día de anticipación para eliminar
contaminantes, luego se deja enfriar.
Azúcar
Aumenta la concentración de azúcar del mosto.
Ácido cítrico y bicarbonato de sodio
Corrige la acidez del mosto diluido, lo que permite que la levadura
actúe adecuadamente. En el caso de fruta muy ácida se le agrega
bicarbonato de sodio y si son menos ácidos se agrega ácido cítrico.
Levadura
Necesaria para la fermentación alcohólica del mosto.
Clarificantes
Mejora la presentación del producto y acelera el proceso de
clarificación (se usa bentonita o enzimas pécticas).
Bisulfito de Sodio
Evita la contaminación en los seguros de fermentación y en el
lavado de botellas.

4. El Proceso de Elaboración
1. Preparación de la pulpa
• Selección
Se recolecta o compra la fruta.
• Pesado con cáscara
• Pelado
Se pela la fruta y se pesa nuevamente. No deben usarse
ni las cáscaras ni las pepas.
• Pesado sin cáscara
Se recomienda pesar la fruta antes y después del pelado.
• Licuado o Prensado
Se troza y se licua la fruta pelada con agua hervida fría o
se prensa manualmente, así se obtiene el mosto.

2. Acondicionamiento y corrección del mosto
En este proceso se mide la pulpa obtenida y se echa sobre los
tachos de fermentación. Luego se le añaden los insumos
necesarios para corregir el mosto que consiste en controlar el
azúcar y la acidez. Se inicia con la dilución de la pulpa en agua
hervida fría, que disminuye la concentración de azúcar.
3. La fermentación alcohólica
Para este paso se usa levadura liofilizada, previamente
activada. Luego se añade al mosto y se deja en reposo por
veinte días.
4. Descube y clarificado del vino
Transcurridos los días de fermentación se procede al descube,
que consiste en separar el vino de fruta de los residuos de
levadura y sólidos precipitados al fondo del recipiente.
5. Embotellado
Se lavan las botellas, debidamente seleccionadas.

5. Defectos en la elaboración de néctares
Regulación del pH
Una inadecuada regulación del pH (acidez del mosto) no
permite seleccionar la flora del mosto y posibilita el crecimiento
de microorganismos indeseables.
Dilución
El mosto muy denso impide una buena fermentación, pero el
mosto muy diluido requiere de más azúcar.
Levadura y nutrientes
Si el nivel de nutrientes y levadura es muy bajo, la
fermentación se paralizará.
6. Recomendaciones
• Se recomienda usar una mezcla de dos frutas; una ácida
y otra menos ácida, en una proporción 30:70.
• El uso del mostímetro facilita el control del proceso de
fermentación, y el uso de la cinta pH permite verificar el
pH para iniciar la fermentación alcohólica.
