principalmente al COLOR: uno de los
parámetros más importantes que el
consumidor utiliza para decidir la
compra de un alimento.
El consumidor asocia el color a :
-Frescura

− Samples packaged in sealed bags at -20ºC
− To thaw the samples and keep them at room temperature:
1. Fresh samples
2. Cooked samples,
Cook the samples in a conventional oven set at 400°F (200ºC) for 50 minutes. Foil will
be placed over the chicken thighs to prevent over-browning and over-drying of the
surface.
Preparation of the thighs cooked: they will be presented skinless, non seasoned, bone
in, whole chicken thighs.
“Open” the meat to see the defect on the bone and on the adjacent meat
Taking picture (*)
We will keep both meat and bone and we will take a picture of both although separately
in order to see if the syndrome affects the bone and/or the meat. This can help us to
define the level of the syndrome

The method is composed of a sample dilution and then the extraxtion of the carotenoids with the iEx. Finally the iCheck photometer gives the color in beta-carotene equivalent.
The method is validated (high correlation with the HPLC standard method)
Analytical steps
1. Dilution of a defined volume of egg yolk/liquid egg with a defined volume of dilution buffer.
2. Intensive mixing of the egg sample with the buffer
3. Removal of a defined aliquot of 400 μl with the included syringes (applicator)
4. Injection into the iEx® vial
5. Intensive mixing
6. Let settle for 5 minutes

I have noticed that for fast growing broilers a very strange cortical bone structure. Examining a section through the tibial cortex the bone is extremely porous. It seems that the oestoblast population is so busy adding width to the bone on the outer surface on the lower edge that there is little time for cortical in-filling, leaing this very porous structure.
On the internal surface large amount of re-absorption is going on to maintain the correct cortical wall thickness.
