2. What is commonly understood by toque, La Toque Blanche, that snowy tower, high, hollow, has been understood
by many as a symbolic representation of a crown, whose height would distinguish the chef, the artist, the creative

vertiente práctica ya que mantiene fresca y acondicionada la cabeza, así como protegida ante las altas temperaturas
de la cocina, pues en su interior, se solía colocar una bolsa de agua fría para mantener la cabeza a una buena
temperatura.

5. The invention of the cap as we know it today is attributed to one of the visionaries of French cuisine in the first third
of the nineteenth century, the famous Marie Antoine Carême, (1783-1833), the great chef of the European Court of

14. Many historians and culinary experts call Soyer "the father of modern cookery." Before his appearance on the scene,
English families of modest circumstances relied on the hearth and professional baker for most of their cooking; the level of
cuisine and nutrition was low. Soyer changed much of this by introducing to the world such labor-saving devices as steam-
turned spits, the pioneer gas stove, an oven small enough for the average home, ice trays, pressure cooking, and a
compendium of fireplace techniques that are still wonderfully practical for today's barbecue enthusiast. Many of his
innovations are delightfully described and illustrated in the book. In addition to being a cookbook, this is a "reading book," a
treasure trove of historical and sociological curiosities, in which Soyer's peppery personality and the climate of his times
come through on every page.

seventeen, Alexis Benoit Soyer, was on his way to fame when in 1837 he became Cook-General at London's Reform
Club. He later organized and supervised Government soup kitchens during the Irish potato famine and British hospital
kitchens in the Crimea (invented the camp-stove). His published works include The Gastronomic Regenerator (1846), The
Modern Housewife (1849), The Pantropheon: A History of Food in All Ages (1853), Soyer's Culinary Campaign with the
Plain Art of Cookery for Military and Civil Institutions (1857), and Instructions for Military Hospitals (1860).

20. M. A. Escoffier, known as "The Chef of Kings and King of Chefs," followed in Careme's footsteps and made the kitchen
even more streamlined and organized. Escoffier added the chef d'partie position which is still in use today, created over
10,000 recipes, and invented the a la carte concept which made fine dining more affordable to the masses. He also
helped to create an image of professionalism for chefs, by requesting that his employees wear jackets and ties when off
duty, stop smoking, drinking and swearing at work, and he encouraged them to obtain higher education. The attire worn
by these chefs was still much the same as in Careme's day, but Escoffier's attitude helped to turn the uniform into
something people respected, not just a drunken working man's outfit that happened to include a funny hat .

cocina más eficiente y organizada. Escoffier añadió al chef la posición de “d´partie”, que todavía está en uso hoy en día.
Creó más de 10.000 recetas. Inventó el concepto de “a la carta”, consiguiendo la buena comida más asequible a las
masas. Él también ayudó a crear una imagen de profesionalidad para los cocineros, solicitando que sus empleados
usaran chaqueta y corbata estando fuera de servicio, dejar de fumar, beber o blasfemar en el trabajo, y les animó para
