As already mentioned, the livestock sector is large and growing rapidly. People in developing countries are consuming an increasing share of their diets in the form of meat, milk and eggs. While staple foods such as cereals and roots and tubers have declined as a share of the diet, per person consumption of milk has doubled, meat more than trebled, and eggs quintupled. Per capita consumption: Eggs: 5-fold increase Meat: 3-fold increase Milk: almost double This growth has been particularly striking since the 1980s, driven by rapid economic and social change. Rising incomes, urbanization and commercialization are transforming the demand for livestock products and hence the entire livestock sector.
Livestock production currently accounts for 40 percent of agricultural output Projected to grow 20 percent by 2018 and More than double by 2050 Production is growing rapidly in developing countries to keep pace with demand, but with striking regional differences. East Asia and Latin America lead growth in meat production ... and in egg production ... but South Asia dominates growth in milk production In contrast, growth in sub-Sarahan Africa has been very slow. Meat: South and Southeast Asia: 20 fold increase Latin America: 4 fold increase Growing demand for livestock products and rapid technological and market change have led to major transformation in livestock production systems. Increasing scale of production and the growth of commercial marketing and trade channels (with higher quality and safety standards) offer tremendous opportunities for producers, but are placing increasing pressure on smallholders who often find it difficult to compete.

Again, it is an important policy goal: • It focuses attention on the fact that overall gains in health have been at the cost of persisting and widening inequalities between socioeconomic groups and areas. For example, mortality rates among children in social class V (unskilled manual households) fell between the late 1970s and the early 1990s, but they were still twice as likely to die between their 1st and 16th birthday as children in social class I (professional households) • It facilitates target setting, with England’s health inequality targets seeking to close the health gap between disadvantaged groups and the population as a whole • It provides clear criteria for monitoring and evaluation. However, focusing on health gaps can limit the policy vision: • The problem and the policy response are again confined to a small proportion of the population. The life expectancy target is aimed at the 20% of areas with the lowest life expectancy; the infant mortality target includes around 40% of births, but it has been criticised for not focusing sufficiently on the disadvantaged groups with the worst health outcomes. • It can encourage perspectives which identify the lifestyles of disadvantaged groups as the cause of health inequalities. Much less attention is given to how the privileges enjoyed at the top of the socioeconomic hierarchy facilitate rates of health improvement which have consistently outstripped those of other socioeconomic groups. • It can obscure the pervasive effects which socioeconomic inequality has on health not only at thebottom, but across the socioeconomic hierarchy.
