1. Ingredientes
-una taza de mijo pelado o arroz yamaní

-un puerro
-dos zanahorias ralladas
-aceitunas negras
Ingredients
-a cup of peeled millet or whole yamani
rice
-two onions
-one scallion
-one leech
-two grated carrots
-black olives
2. -orégano
-aceite de oliva orgánico
-sal marina
Preparación
Tostar el cereal en seco cinco minutos o
hasta lograr un leve tostado que se verá
reflejado en su aroma y el cambio de
color del cereal. Agregar dos tazas de
agua y una pizca de sal marina . Hervir a
olla tapada , bajar el fuego y cocinar por
veinticinco o treinta minutos.
Mientras hierve el arroz o el mijo, cortar
las cebollas y el puerro en brunoise y
cocinar a fuego lento durante cinco
minutos. Unos minutos antes de apagar el
fuego verter las zanahorias ralladas.
Agregar las verduras al cereal cuando
esté tibio y mezclar con las manos
apretando la preparación a la vez que se
mezcla. Esto hará que se apelmace el
cereal para así facilitar el armado .
Pincelar las croquetas con aceite de oliva
y colocar en una placa de horno. Hornear
hasta que estén dorados.

Procedure
Roast the dry cereal for five minutes or
until it is slightly brown and changes its
flavor. Add two cups of water and a pinch
of sea salt . Bring it to a boit with pot
covered and then simmer it over low heat
for twenty five or thirty minutes.
While you are cooking the rice or millet,
chop the onions and the leech in brunoise
and cook them over low heat for five
minutes. Before it is ready, add the
grated carrots. Add the vegetables to
the cereal when it is lukewarm and mix it
with your hands, squeezing the mixture
as it is being mixed. This will compact the
cereal to help shape the croquettes.
Brush the croquettes with olive oil and
place them on a baking sheet. Bake them
until brown.
