2. IN ENGLISH
In a large crock source, where fit comfortably all the ingredients, all the
background of olive oil and a splash of vinegar fills. The bouquet garni
and two bay leaves are placed. A long, deep cuts in the shoulders or
legs (usually the butcher do it if requested) are performed, and peeled
garlic are introduced. Shoulders or legs with salt, crushed garlic with oil
and rub. They are sprinkled with a dash of vinegar and placed in the
source clay.
Are introduced into the oven and roast at 180 degrees for 1 to 2 hours
(depending on the size of the legs or under desired doneness).
If the lamb is dry during cooking, add water with a little vinegar.
Once baked, take it out and legs or shoulders are cut into slices.
Serve with sauce and boiled potatoes.
3. EN ESPAÑOL
En una fuente de barro grande, en donde quepan con holgura todos los
ingredientes, se llena toda el fondo de aceite de oliva y un chorro de
vinagre. Se colocan el ramillete de hierbas y las dos hojas de laurel. Se
realizan unos cortes largos y profundos en las paletillas o piernas (el
carnicero suele hacerlo si se pide), y se introducen los ajos pelados. Se
frotan las piernas o paletillas con sal, con un ajo aplastado y con aceite.
Se las rocía con un chorrito de vinagre y se colocan en la fuente de
barro.
Se introducen en el horno y se asan a 180º durante 1 ó 2 horas (según
el tamaño de las piernas o según el grado de cocción deseado).
Si el cordero se queda seco durante la cocción, se añade agua con un
poquito de vinagre.
Una vez horneado, se saca y se cortan las piernas o paletillas en
lonchas.
