1. Castilian garlic soup
Spanish recipe

2. Ingredients
 10 cloves of garlic
 6 eggs (1 per person)
 12 slices of stale bread
 150 g of ham
 2 liters and half beef broth
 Salt and pepper (to taste)
 2 tablespoons sweet paprika
 50 ml of extra virgin olive oil

3. Preparation
1) Peel and chop the garlic. Garlic should give to smell the soup is
excellent. Reserve in a bowl.
2) We chose a large saucepan, heat the oil in the bottom and
insert the garlic. Sauté until they begin to take on a golden color
and add the finely chopped ham. Stir with a wooden spoon until
the flavors together nicely.
3) When we have a roasted garlic honey colored add 6 slices of
stale bread and give them a spin. We remove from the heat and
sprinkle with paprika. It is important to do with the pan off the
heat to prevent the paprika from burning.

4. 4) Stir everything well and the oil with the garlic, ham, hard bread
and paprika comes together. Sauté everything for 2-3
minutes, stirring and add the beef broth. Boil over medium heat
for about 20 minutes, at that time need not stir the soup.
5) After 20 minutes add the remaining bread. Add salt and freshly
ground black pepper.
6) We break the eggs and threw the soup. Let curdle for 2-3
minutes. When we add the soup to the bowl with the yolk mixture
and the soup is delicious.
7) Serve the hot soup into a bowl or if we are in clay pots.

5. Sopas de ajo o sopa
castellana

6. Ingredientes
 10 dientes de ajo
 6 huevos (1 por persona)
 12 rebanadas de pan duro
 150 g de jamón serrano
 2 litros y medio de caldo de carne
 Sal y pimienta (al gusto)
 2 cucharadas de pimentón dulce
 50 ml de aceite de oliva virgen extra

7. Preparación
1) Pelamos y partimos los ajos. El ajo debe dar olor para que la sopa
sea excelente. Reservamos en un cuenco.
2) Elegimos una cazuela grande, calentamos el aceite en el fondo e
introducimos el ajo. Salteamos hasta que comiencen a coger un
color dorado y añadimos también el jamón cortado en trozos
pequeños. Removemos con una cuchara de madera hasta juntar
bien los sabores.
3) Cuando los ajos tengan un color miel tostado añadimos 6
rebanadas de pan duro y les damos unas vueltas. Retiramos la
cazuela del fuego y espolvoreamos con el pimentón dulce. Es
importante hacerlo con la cazuela fuera del fuego para evitar que el
pimentón se queme.

8. 4) Removemos todo bien y que se junte el aceite con los ajos,
el jamón, el pan duro y el pimentón. Rehogamos todo
durante 2-3 minutos más y sin dejar de remover agregamos
el caldo de carne. Cocemos a fuego moderado durante
unos 20 minutos, en ese tiempo no hace falta remover la
sopa.
5) Pasados los 20 minutos añadimos el resto del pan.
Añadimos sal y pimienta negra recién molida.
6) Rompemos los huevos y los echamos a la sopa. Dejamos
cuajar durante 2-3 minutos. Cuando añadimos la sopa al
cuenco la yema se mezcla con la sopa y queda deliciosa.
7) Servimos la sopa caliente en un cuenco o si tenemos en
cazuelas de barro.
