Este documento proporciona instrucciones para hacer una tortilla española. Primero, se cocinan las papas y cebollas en aceite hasta que estén blandas. Luego, se baten los huevos y se mezclan con las verduras cocinadas. La mezcla se vierte en una sartén caliente y se cuece, dándole la vuelta cuando empieza a burbujear. Finalmente, se sirve la tortilla lista después de 1-2 minutos más de cocción.

2. Poner al fuego una sartén honda con abundante
aceite y cuando está caliente, echar las patatas,
peladas y cortadas en láminas pequeñas y la
cebolla cortada en juliana, salar y tapar la sartén.
Mantener el fuego no muy fuerte, para que las
patatas y la cebolla, se cuezan en el aceite. Cuando
estén bien blandas y ligeramente doradas, pero
antes de que se frían del todo, sacar de la sartén y
escurrir el aceite.
En un bol batir los huevos, hay quien recomienda
batir primero las claras, casi hasta punto de nieve,
añadir luego las yemas y seguir batiendo hasta
conseguir una buena mezcla. Yo bato los huevos a
la manera clásica, con un tenedor, pero se puede
hacer con un batidor manual, yo no lo haría con la
batidora eléctrica.
Echar las patatas y la cebolla sobre los huevos
batidos y remover bien para que quede todo bien
mezclado. Rectificar de sal.

3. Poner al fuego una sartén, que tenga un buen fondo para
que no se pegue, echar dos cucharadas de aceite y
cuando esté caliente, mover la sartén para que quede
bien aceitada, entonces echar la mezcla de huevos,
patatas y cebolla y extenderla bien. Bajar el fuego y
mover con movimientos circulares para que la tortilla
"baile" y no se pegue. Dejar cocer hasta que se vea que
empieza a burbujear.
Dar la vuelta a la tortilla (aparte de otras connotaciones),
tiene un arte, yo se la doy con un plato llano, pero se
puede usar una tapadera plana, e incluso hay artilugios
de aluminio o de cerámica para voltear tortillas.
Si la sartén ha quedado muy seca, echar otras 2
cucharadas de aceite y cuando esté bien caliente,
echaremos de nuevo la tortilla, dejándola resbalar
cuidadosamente, desde el plato a la sartén. Bailarla de
nuevo con movimientos circulares y dejarla cocer entre 1
y 2 minutos, dependiendo del gusto de los comensales.
