1. Tortilla española
Ingredientes:
- 6 patatas peladas
- 1 cebolla
- 6 huevos
- 3 tazas de aceite de oliva
- Sal
Preparación:
Cortamos las patatas peladas en cubos de un centímetro. Pelamos y cortamos la
cebolla en rodajas. Mezclamos las patatas con la cebolla y la sal.
En una sartén grande calentamos el aceite bastante. Con cuidado colocamos la
mezcla de patatas y la cebolla en la sartén distribuyéndola por la sartén. El aceite
debería cubrir las patatas por completo.
Dejar en la sartén hasta que las patatas estén hechas. Si puedes apretar con una
espátula una pieza de patata y se rompe en dos, las patatas están hechas. Retirar de
la sartén con una espumadera y escurrir bien el aceite.
Rompemos los huevos en un recipiente grande y batir a mano con un tenedor.
Echar la mezcla de patatas y cebolla en el recipiente con los huevos y mezclar.
Echamos 1-2 cucharadas de aceite de oliva en una sartén antiadherente (de
aproximadamente 9-10") y calentar a fuego medio. Cuando esté caliente, echamos
la mezcla de patata, huevos y cebolla y esparcimos a lo largo de la sartén. Dejamos
que el huevo se cocine por las orillas. El centro de la mezcla no debería de
cocinarse del todo y el huevo debe de estar crudo. Cuando la mezcla esté
amarronada por arriba estará listo para dar la vuelta a la tortilla. Cogemos la
sartén y nos acercamos al fregadero. Cogemos un plato grande (12") y lo
colocamos del revés sobre la sartén. Con una mano en el mango de la sartén y la
otra mano en el plato damos rápidamente la vuelta a la sartén y la tortilla caerá
sobre el plato. Colocamos de nuevo la sartén en el fuego y ponemos aceite
suficiente para cubrir las orillas y el centro de la sartén. Dejamos que la sartén se
caliente durante 30 segundos más o menos y dejamos que la tortilla se deslice en la
sartén de nuevo. Usamos la espátula para dar forma a las orillas de la sartén.
Dejamos que la tortilla se cocina durante 3 ó 4 minutos. Apagamos el fuego y
dejamos la tortilla que repose durante un par de minutos. !La tortilla está lista!
2. Spanish omelet
Ingredients:
- 6 peeled potatoes
- 1 onion
- 6 eggs
- 3 cups of olive oil for pan frying
- Salt
Preparation:
Cut the peeled potatoes in dice of about one centimetre long. Peel and chop the
onion in slices. Mix the potatoes and the onion and salt the mixture.
In a large, heavy, non-stick frying pan, heat the olive oil on high heat. Carefully
place the potato and onion mixture into the frying pan, spreading them evenly over
the surface. The oil should almost cover the potatoes.
Leave in pan until the potatoes are cooked. If you can poke a piece of potato with a
spatula and it easily breaks in two, your potatoes are done. Remove from the pan
with a slotted spoon or spatula and allow oil to drain.
Crack the eggs into a large mixing bowl and beat by hand with a fork. Pour in the
potato onion mixture. Mix all together.
Pour 1-2 spoons of olive oil into a small, non-stick frying pan (aprox. 9-10”) and
heat on medium heat. When hot, stir the potato onion mixture once more and
“pour” into the pan and spread out evenly. Allow the egg to cook around the edges.
The inside of the mixture should not be completely cooked and the egg will still be
runny.
When the mixture has browned on the bottom, you are ready to turn it over to
cook the other side. Take the frying pan to a sink. Place a large dinner plate (12”)
upside down over the frying pan. With one hand on the frying pan handle and the
other on top of the plate to hold it steady, quickly turn the frying pan over and the
omelet will “fall” onto the plate. Place the frying pan back on the range and put just
enough oil to cover the bottom and sides of the pan. Let the pan warm for 30
seconds or so. Now slide the omelet into the frying pan. Use the spatula to shape
the sides of the omelet. Let the omelet cook for 3-4 minutes. Turn the heat off and
let the tortilla sit in the pan for 2 minutes. The Spanish omelet is ready!
3. Salmorejo
Ingredientes:
- 500 gramos de tomates maduros
- 1 diente de ajo
- 1 cucharada de vinagre
-4 cucharadas de aceite de oliva
- Sal
- 2 huevos cocidos
- Jamón serrano troceado
- Pan tostado
Preparación:
Primero le quitamos la corteza al pan. Si no puedes conseguir pan francés o pan
español usa pan de molde. Si utilizamos barras quitarle la corteza puede ser
bastante difícil. Podemos usar un pelador o cortar el pan en rodajas gruesas y
después quitarle la corteza con un cuchillo grande.
Los tomates deberían de estar pelados. Cortamos los tomates y los ponemos en la
licuadora con el aceite, el vinagre, el ajo y un poco de sal ( puedes añadir también
las yemas de los huevos cocidos en este paso). Mezclamos todo y empezamos a
añadir el pan poco a poco. La mezcla empezará a espesarse a medida que añadimos
el pan y costará más mezclarse.
Cuando se acabe el pan el salmorejo estará listo. Pon el salmorejo en un recipiente
y déjalo enfriar en el frigorífico.
Justo antes de servirlo echamos encima el huevo cocido y el jamón serrano.
4. Salmorejo
Ingredients:
- 500 gr. of ripe and red tomatoes
- 1 clove of garlic
- 1 spoon of vinegar
- 4 spoons of olive oil
- salt
- 2 boiled eggs
- Some chopped up jamon serrano
- 1 spanish stick bread
Preparation:
First, crust off the bread. If you can’t get anything like Spanish/French bread you
could use sliced bread. If you are using a stick bread getting the crust off can be
quite messy. You can use a peeler or cut the bread into thick slices and then cut off
the crust use a large heavy knife.
The tomatoes should be peeled. Chop the tomatoes up and put them in the food
blender with the oil, vinegar, garlic and a little salt (you can also add the egg yolks
from the boiled eggs at this stage if you want to). Blend this all together and then
start to add the bread bit by bit. The mixture will very quickly become thicker and
as you add the bread it will take longer for it to mix through. When no more bread
will mix through it the Salmorejo is ready. You may not need to add all the bread or
you may need a bit more.
Pour the Salmorejo into a bowl and chill it in the fridge.
Just before serving garnish with chopped up egg white and jamon serrano if you
can find it.
5. Fabada Asturiana
Ingredientes:
- 400 gramos de alubias
- 200 gramos de chorizo picante
- 200 gramos de morcilla
- 200 gramos de carne de cerdo
- 100 gramos de bacon
- 6 hilos de azafrán
- sal
Preparación:
Ponemos las alubias a remojo en agua fría la noche anterior. Colocamos también en
otro recipiente la carne de cerdo y el bacon en agua templada. Al siguiente día,
lavamos la morcilla y el chorizo. Colocamos las alubias en una cazuela con agua
suficiente para cubrirlas por completo y que sobren un par de dedos de agua.
Hervimos sin tapa a fuego alto quitando la espuma con una espumadera. Añadimos
la carne de cerdo y el bacon y hervimos a fuego lento durante dos horas,
removiendo de vez en cuando. Después añadimos el azafrán, el chorizo y la
morcilla dejándolo cocinarse durante un cuarto de hora aproximadamente.
Probamos las alubias para comprobar que estén blandas y las dejamos reposar
media hora antes de servir.
6. Fabada(Asturian bean stew)
Ingredients:
- 400 gr. of beans
- 200 gr. spicy sausage
- 200 gr. of black pudding (smoked and dry)
- 200 gr. of pork´s shoulder
- 100 gr. of bacon
- 6 sprigs of saffron
- salt
Preparation:
Put the beans to soak overnight in cold water. Also place the shoulder of pork and
the bacon in another container with warm water. Next day, wash the black
pudding and the spicy sausage. Then place the beans in a cooking pot with enough
water to cover them by a couple of fingers. Boil uncovered on a high flame,
removing any scum with a skimming spoon. Add the shoulder of pork and the
bacon and simmer with the lid on for 2 hours, moving the cooking pot around from
time to time. Season and add the saffron, spicy sausage and the black pudding,
leaving it all to cook together for approximately quarter of an hour. Taste the
beans to check they are tender and leave to stand for half an hour before serving.
